Chicken Shawarma Bowls are what I make when I want something fresh and filling but still packed with flavor. The chicken gets coated in warm spices and cooked until the edges are nicely browned, then served over rice with crisp vegetables and a creamy sauce.
The first time I made shawarma-style chicken at home, I was surprised by how much flavor came from a handful of simple spices. You do not need a complicated marinade or special equipment to get that savory, slightly smoky taste.
I like building the bowls with a mix of textures. Warm rice and juicy chicken go underneath cool cucumber, tomato, and lettuce, while the garlic sauce brings everything together.
You can also make the chicken ahead of time and assemble the bowls whenever you are ready to eat. That makes this a great option for easy lunches during the week.
What Is Chicken Shawarma Bowls
Chicken Shawarma Bowls are a simple way to serve shawarma-seasoned chicken with rice, fresh vegetables, and a creamy sauce instead of wrapping everything in pita bread.
The chicken is seasoned with spices such as cumin, paprika, coriander, and garlic, then cooked in a hot skillet until tender and browned around the edges. The rice gives you a hearty base, while the fresh toppings keep the bowl from feeling too heavy.
I like keeping the toppings flexible. You can use what you already have in the fridge and still get that same satisfying combination of warm spiced chicken, fresh vegetables, and creamy sauce.
Ingredients for Chicken Shawarma Bowls
For the Chicken
- 2 boneless, skinless chicken breasts: Two breasts are enough to make several hearty bowls. Cut them into thin strips or small pieces so they cook quickly and develop plenty of browned edges.
- 1 tablespoon olive oil: Helps the spices stick to the chicken and gives the pieces a nice golden exterior as they cook.
- 1 teaspoon ground cumin: Adds a warm, earthy flavor that is an important part of the shawarma-style seasoning.
- 1 teaspoon paprika: Gives the chicken mild sweetness, color, and a subtle smoky flavor.
- 1/2 teaspoon ground coriander: Adds a light citrusy, earthy note that works well with the cumin.
- 1/2 teaspoon garlic powder: Brings savory garlic flavor throughout the chicken without adding extra moisture.
- 1/4 teaspoon turmeric: Adds warm flavor and gives the chicken its appealing golden color.
- 1/2 teaspoon salt: Seasons the chicken and helps all the spices taste more balanced.
- 1/4 teaspoon black pepper: Adds a little sharpness to the spice mixture.
- 1 tablespoon lemon juice: Adds brightness and a little acidity to balance the warm spices.
- 1 teaspoon honey: Adds just enough sweetness to help balance the lemon and spices while encouraging light browning.
For the Bowls
- 2 cups cooked rice: Rice gives the bowls a hearty base and absorbs some of the chicken juices and sauce. White or brown rice both work well.
- 1 cup chopped lettuce: Adds freshness and crunch underneath the warm chicken.
- 1 cucumber: Dice it into small pieces for a cool, crisp contrast to the seasoned chicken.
- 1 tomato: Chopped tomato adds juiciness and a little natural sweetness to the bowl.
- 1/4 small red onion: Thinly sliced red onion gives the bowls a sharp, fresh bite. You can use less if you prefer a milder flavor.
- 2 tablespoons chopped fresh parsley: Adds a fresh herbal finish and brightens the other ingredients.
For the Garlic Sauce
- 1/2 cup plain Greek yogurt: Creates a creamy, slightly tangy base for the sauce without making it overly heavy.
- 1 tablespoon mayonnaise: Adds richness and gives the sauce a smoother texture.
- 1 small garlic clove: Fresh garlic gives the sauce its strong savory flavor. Grate or finely mince it so it blends evenly.
- 1 tablespoon lemon juice: Adds acidity and keeps the creamy sauce tasting fresh.
- 1 to 2 tablespoons water: Thins the sauce to a consistency that is easy to drizzle over the bowls.
- Pinch of salt: Brings the flavors together and keeps the yogurt from tasting flat.
How to Make Chicken Shawarma Bowls
- Prepare the chicken: Cut the chicken breasts into thin strips or small bite-sized pieces and place them in a large bowl. Add the olive oil, cumin, paprika, coriander, garlic powder, turmeric, salt, black pepper, lemon juice, and honey. Toss everything thoroughly until the chicken is evenly coated with the spice mixture. Let it sit for about 10 to 15 minutes while you prepare the other ingredients.
- Make the garlic sauce: Add the Greek yogurt, mayonnaise, grated garlic, lemon juice, and salt to a small bowl. Stir until smooth, then add water a little at a time until the sauce is thin enough to drizzle but still creamy. Taste it and add another small squeeze of lemon if you want more brightness.
- Prepare the vegetables: Chop the lettuce, cucumber, and tomato into bite-sized pieces and thinly slice the red onion. Keep the vegetables separate until you’re ready to build the bowls so they stay crisp and fresh.
- Cook the chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken in a single layer, working in batches if the pan feels crowded. Cook for about 4 to 6 minutes on the first side, then stir and continue cooking for another 3 to 5 minutes, until the chicken is cooked through and has browned edges. The chicken should reach 165°F in the thickest pieces.
- Let the chicken rest: Remove the cooked chicken from the skillet and let it rest for a few minutes before assembling the bowls. This gives the juices time to settle and keeps the chicken more tender when you cut or spoon it into the bowls.
- Warm the rice: If you are using freshly cooked rice, keep it warm. For leftover rice, reheat it gently with a small splash of water so it becomes soft again rather than dry. The warm rice creates a nice contrast with the cool vegetables.
- Build the bowls: Divide the warm rice between serving bowls. Add the chopped lettuce, cucumber, tomato, and red onion around the rice, then place the warm shawarma chicken over the top. Try to spread the ingredients around the bowl rather than piling everything in one spot so you get a little of each component in every bite.
- Add the sauce: Drizzle the garlic sauce generously over the chicken and vegetables. You can add more or less depending on how creamy you want the bowl, and any extra sauce can be served on the side.
- Finish the bowls: Sprinkle fresh parsley over each bowl and add an extra squeeze of lemon if you like. Serve while the chicken and rice are warm so you get the best contrast between the hot chicken, fresh vegetables, and cool sauce.
What to Serve Chicken Shawarma Bowls With
These bowls are already a complete meal, so I usually keep the extras simple. Warm pita bread is a great choice if you want something to scoop up the chicken and sauce with. You can also add hummus on the side for another creamy element.
Pickled vegetables are especially good here because their tangy flavor cuts through the warm spices and creamy sauce. A small serving of tabbouleh or a simple cucumber salad would also fit nicely without making the meal too heavy.
If you’re preparing these for a family, you can put all the toppings on the table separately and let everyone build their own bowl. I find that makes dinner easier, especially when everyone wants slightly different amounts of vegetables or sauce.
How to Store and Reheat Chicken Shawarma Bowls
For the best leftovers, store the chicken, rice, vegetables, and garlic sauce separately in airtight containers. The cooked chicken and rice will keep in the refrigerator for up to 3 to 4 days, while keeping the vegetables separate prevents them from becoming soggy.
When you’re ready to eat, reheat the chicken and rice in the microwave or in a skillet over medium-low heat. Add a small splash of water to the rice before reheating if it has become dry. The vegetables and garlic sauce should be added after the warm ingredients have been reheated.
I would not reheat the entire assembled bowl because the lettuce and cucumber will lose their crisp texture. Building a fresh bowl from the stored ingredients takes only a few minutes and tastes much closer to the original meal.
