Chicken Marsala Pasta

Chicken Marsala Pasta is one of those dinners that makes the kitchen smell like I put in much more effort than I actually did. The chicken gets golden in the skillet, the mushrooms soak up the savory sauce, and everything comes together with pasta in a creamy Marsala sauce.

I like making this when I want something a little more comforting than plain chicken and pasta. The Marsala adds a deep, slightly sweet flavor that works surprisingly well with the creamy sauce and earthy mushrooms.

The best part for me is the sauce. It picks up all those browned bits from the chicken and mushrooms, then coats the pasta so you get plenty of sauce in every bite.

You can use spaghetti, fettuccine, penne, or whatever pasta you already have. I usually choose a shape that holds onto the creamy sauce well.

Ingredients for Chicken Marsala Pasta

For the Chicken

  • 2 boneless, skinless chicken breasts: Cut the chicken into thin strips or bite-sized pieces so it cooks quickly and mixes easily with the pasta.
  • 1/2 teaspoon salt: Seasons the chicken and brings out its natural flavor.
  • 1/4 teaspoon black pepper: Adds a little bite and balances the creamy sauce.
  • 1/2 teaspoon garlic powder: Gives the chicken extra savory flavor without adding moisture to the skillet.
  • 1 tablespoon olive oil: Helps the chicken brown nicely and prevents it from sticking while it cooks.

For the Marsala Sauce

  • 8 ounces mushrooms: Sliced mushrooms add an earthy, savory flavor and give the sauce more texture. White or cremini mushrooms both work well.
  • 2 tablespoons butter: Adds richness to the mushroom sauce and helps create a smooth finish.
  • 2 cloves garlic: Fresh garlic adds a savory layer that works with both the mushrooms and Marsala.
  • 3/4 cup dry Marsala wine: Provides the signature flavor of the dish, with a deep, slightly sweet taste. Use dry Marsala rather than sweet Marsala for a more savory sauce.
  • 1/2 cup chicken broth: Adds savory flavor and helps loosen the sauce after the Marsala reduces.
  • 3/4 cup heavy cream: Gives the sauce its creamy texture and helps mellow the stronger flavor of the wine.
  • 1/3 cup grated Parmesan cheese: Adds salty, nutty flavor and helps the sauce cling to the pasta.
  • 1/2 teaspoon Italian seasoning: Brings a mild herb flavor that works well with the chicken and mushrooms.
  • 1/4 teaspoon red pepper flakes: Adds a small amount of heat. You can leave them out if you prefer a mild sauce.

For the Pasta

  • 8 ounces pasta: Fettuccine, linguine, penne, or spaghetti all work well. Choose a shape that can hold plenty of the creamy sauce.
  • 1/2 cup reserved pasta water: The starchy water helps loosen the sauce and allows it to coat the pasta smoothly.
  • 2 tablespoons chopped fresh parsley: Adds a fresh finish and a little color to the rich pasta.

How to Make Chicken Marsala Pasta

  • Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package directions until it is just tender. Before draining, reserve about 1/2 cup of the pasta water. Drain the pasta and set it aside while you prepare the chicken and sauce.
  • Season the chicken: Cut the chicken breasts into thin strips or small pieces and place them in a bowl. Add the salt, black pepper, and garlic powder, then toss until the chicken is evenly seasoned. Keeping the pieces similar in size will help them cook at the same rate.
  • Brown the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 4 to 6 minutes, turning the pieces occasionally, until they are golden on the outside and cooked through. Remove the chicken from the skillet and set it aside. Do not wipe out the pan because the browned bits left behind will add flavor to the sauce.
  • Cook the mushrooms: Add the butter to the same skillet and let it melt over medium heat. Add the sliced mushrooms and cook for about 5 to 7 minutes, stirring occasionally, until they soften and develop golden-brown edges. Give them enough time to release their moisture and brown instead of stirring constantly.
  • Add the garlic: Stir the minced garlic into the mushrooms and cook for about 30 seconds, just until fragrant. Keep the heat moderate so the garlic does not burn while the mushrooms finish cooking.
  • Add the Marsala: Pour the dry Marsala wine into the skillet and scrape the bottom with a wooden spoon to loosen the browned pieces. Let the wine simmer for about 3 to 4 minutes, stirring occasionally, until it reduces slightly and the strong alcohol smell has cooked off.
  • Build the creamy sauce: Pour in the chicken broth and heavy cream, then add the Italian seasoning and red pepper flakes. Stir everything together and let the sauce gently simmer over medium-low heat for about 4 to 5 minutes, until it begins to thicken slightly.
  • Add the Parmesan: Stir the grated Parmesan into the sauce and continue cooking over low heat for about 1 to 2 minutes. The cheese should melt smoothly into the cream, giving the sauce a thicker and richer texture.
  • Return the chicken: Add the cooked chicken and any juices left on the plate back into the skillet. Stir gently so the chicken becomes coated in the Marsala sauce, then let it simmer for another 1 to 2 minutes to warm everything together.
  • Add the pasta: Add the drained pasta directly to the skillet and toss carefully until every piece is coated with the creamy sauce. If the sauce looks too thick, add the reserved pasta water a tablespoon or two at a time while tossing until it becomes smooth and glossy.
  • Adjust the consistency: Let the pasta cook with the sauce over low heat for another minute or two. The sauce should cling to the noodles without being dry or watery. Taste and add a little more salt or black pepper if needed.
  • Finish with parsley: Turn off the heat and sprinkle the chopped fresh parsley over the pasta. Give everything one final gentle toss so the herbs are spread throughout the dish.
  • Serve immediately: Spoon the pasta into bowls while it is hot and creamy. Add a little extra Parmesan and parsley on top if you like, and serve right away while the sauce has its best consistency.

What to Serve Chicken Marsala Pasta With

I usually keep the sides light because this pasta is already creamy and filling. A simple green salad with lettuce, cucumber, and a light vinaigrette works really well and adds some freshness to the meal.

Roasted broccoli, asparagus, or green beans are also good choices. The vegetables bring a little texture and balance without taking attention away from the Marsala sauce.

If you want bread, go with something simple and crusty. It is hard to resist using a piece of warm bread to pick up any creamy sauce left in the bowl.

How to Store and Reheat Chicken Marsala Pasta

Let the pasta cool before transferring it to an airtight container. Store it in the refrigerator for up to 3 to 4 days. The sauce will naturally thicken as it cools, so leftovers may look much less creamy straight from the refrigerator.

For the best result, reheat the pasta gently in a skillet over medium-low heat. Add a splash of chicken broth, milk, or cream and stir frequently as the pasta warms. The extra liquid helps loosen the sauce and brings back some of its original creamy texture.

You can also reheat individual portions in the microwave. Add a small splash of liquid before heating, then warm in short intervals and stir between each one. Avoid overheating the pasta because the creamy sauce can become oily or separate when exposed to very high heat.
