Baked Buffalo Chicken Dip

Baked Buffalo Chicken Dip is what I make when I want a hot appetizer that can go from the oven straight to the table. There is something about serving it warm with the cheese bubbling on top that makes it hard to resist.

I keep this recipe simple with cooked shredded chicken, cream cheese, buffalo sauce, ranch, and cheddar. Everything gets mixed together in one baking dish, so there is not much cleanup afterward either.

The first few bites are creamy and cheesy, followed by that familiar buffalo heat. You can make it mild for a family gathering or add more buffalo sauce if you are serving people who like their dip spicy.

I usually put out plenty of crunchy things for dipping because the creamy texture really needs that contrast. Tortilla chips are my favorite, but celery, carrots, crackers, and toasted bread all work.

This dip is creamy, cheesy, tangy, and spicy without requiring much preparation. Since the chicken is already cooked, most of the work is simply mixing everything together.

Baking also gives the dip a lightly golden, bubbling top that you do not get from simply mixing the ingredients and serving them cold. The edges become especially good once the cheese starts to brown.

You can also prepare the dip ahead of time and keep it covered in the refrigerator until you are ready to bake it. That makes it handy when you are putting together several dishes for a party.

Ingredients for Baked Buffalo Chicken Dip

For the Dip

  • 2 cups cooked shredded chicken – Rotisserie chicken or leftover cooked chicken both work well.
  • 8 ounces cream cheese – Let it soften so it mixes easily with the other ingredients.
  • 1/2 cup buffalo sauce – Use more or less depending on how spicy you want the dip.
  • 1/2 cup ranch dressing – Adds a creamy, tangy flavor.
  • 1 cup shredded cheddar cheese – Half can be mixed into the dip and the rest can go on top.
  • 1/2 teaspoon garlic powder – Adds a little extra savory flavor.

For Topping

  • 2 tablespoons sliced green onions – Optional, but they add freshness and color.
  • 2 tablespoons extra cheddar cheese – Optional if you want a cheesier top.

For Serving

  • Tortilla chips – Great for scooping the creamy dip.
  • Celery and carrot sticks – Add a fresh, crunchy contrast.
  • Crackers or toasted bread – Another easy option for serving.

How to Make Baked Buffalo Chicken Dip

  • Preheat the oven: Set your oven to 375°F and allow it to fully heat while you prepare the dip. Lightly grease a small baking dish so the creamy mixture does not stick around the edges.
  • Soften the cream cheese: Let the cream cheese sit at room temperature for about 20 to 30 minutes if you have time. Soft cream cheese blends much more easily, which helps you get a smooth dip without having to work too hard to break up cold pieces.
  • Mix the base: Add the softened cream cheese, buffalo sauce, ranch dressing, and garlic powder to a large bowl. Stir until the mixture is mostly smooth and the buffalo sauce is evenly blended throughout the cream cheese.
  • Add the chicken and cheese: Fold in the shredded chicken and about half of the shredded cheddar cheese. Mix thoroughly so the chicken gets coated with the creamy buffalo mixture and there are no large pockets of plain chicken.
  • Transfer to the baking dish: Spoon the mixture into your prepared baking dish and spread it into an even layer. Sprinkle the remaining cheddar cheese over the top, making sure it covers the surface well so you get a melted, cheesy finish.
  • Bake the dip: Place the dish in the oven and bake for about 20 to 25 minutes, or until the dip is hot around the edges and the cheese on top has completely melted. If you want a more golden top, you can broil it for 1 to 2 minutes at the end, but watch it closely.
  • Let it settle: Remove the dip from the oven and let it rest for about 5 minutes before serving. It will still be hot, but giving it a few minutes allows the mixture to thicken slightly and makes it easier to scoop.
  • Add the finishing touches: Sprinkle sliced green onions over the top if you are using them. Serve the dip while it is warm with tortilla chips, celery, carrots, crackers, or toasted bread.

What to Serve Baked Buffalo Chicken Dip

I like putting tortilla chips and fresh vegetables next to this dip because the crunch balances the creamy texture. Celery and carrots are especially good with the buffalo flavor and give everyone a lighter option for dipping.

Crackers, pita chips, pretzels, and toasted slices of baguette also work well. If you are serving the dip at a party, I would put out a few different options so people can choose between something crunchy, salty, or fresh.

For a larger appetizer spread, serve it with chicken wings, sliders, potato wedges, or a simple veggie platter. The dip is rich enough that you do not need many complicated sides.

How to Store and Reheat Baked Buffalo Chicken Dip

Store leftover baked buffalo chicken dip in an airtight container in the refrigerator for up to 3 to 4 days. Let it cool slightly before covering it, and refrigerate it within about 2 hours of serving.

To reheat a larger portion, place it in an oven-safe dish and warm it at 350°F until it is hot and bubbling around the edges. For a smaller serving, the microwave works well; heat it in short intervals and stir between each one.

If the dip becomes thicker after chilling, stir in a small amount of ranch dressing or buffalo sauce before reheating. That helps restore the creamy texture and keeps the flavor balanced.
