The mozzarella changes the texture of the finished dish in a really good way. The sauce stays creamy underneath, while the cheese melts over the chicken and creates a soft, cheesy layer that makes the whole skillet feel extra comforting.

The chicken is browned first, then the sauce is built in the same pan with garlic, broth, cream, Parmesan, and sun-dried tomatoes. That means all the little browned pieces left from the chicken become part of the sauce instead of being left behind.

I usually serve this with something simple because the chicken and sauce are already rich. Rice, pasta, mashed potatoes, or crusty bread all give you a good way to enjoy the extra sauce.

Sun-dried tomatoes are still an important part of the recipe because their sweet and tangy flavor helps balance the richness of the cream and cheese. Fresh basil added at the end brings a little brightness to the finished skillet.

You can serve it straight from the pan as a complete dinner or pair it with your favorite side if you want something more filling.

For the Chicken

  • 1/2 teaspoon Italian seasoning: This adds more herb flavor to the sauce and connects it with the seasoning on the chicken.
  • 1/4 teaspoon red pepper flakes: Red pepper flakes add a gentle amount of heat that helps balance the creamy sauce. You can leave them out if you prefer a mild dish.

For the Mozzarella and Finishing

  • 1/2 cup shredded mozzarella cheese: Mozzarella melts over the chicken and gives the dish a soft, stretchy, cheesy topping. Use low-moisture shredded mozzarella for an easy melt and good coverage.
  • 2 tablespoons fresh basil, chopped: Fresh basil adds a bright herbal flavor that helps balance the richness of the cheese and cream. Sprinkle it over the dish after cooking.
  • 1/4 cup chicken broth, as needed: Keep a little extra broth nearby so you can loosen the sauce if it becomes too thick while simmering.

How to Make Marry Me Chicken with Mozzarella

  • Prepare the chicken: Pat the chicken breasts dry with paper towels, then season both sides evenly with Italian seasoning, salt, and black pepper. If the chicken breasts are thick, slice them horizontally or gently pound them to an even thickness. This helps them cook at the same rate and makes the finished chicken easier to serve.
  • Sear the chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, place the chicken into the skillet and cook for about 4–5 minutes on each side, or until golden brown and cooked through. Remove the chicken and place it on a plate while you prepare the sauce.
  • Cook the garlic: Reduce the heat to medium and add the minced garlic to the same skillet. Stir for about 30 seconds, scraping the bottom gently with a wooden spoon to loosen some of the browned chicken pieces. Keep the garlic moving so it becomes fragrant without burning.
  • Deglaze with chicken broth: Pour the chicken broth into the skillet and stir well. Scrape the bottom of the pan as the broth simmers so all those browned pieces mix into the liquid. Let it cook for about 1 minute before adding the cream.
  • Make the creamy sauce: Pour in the heavy cream and add the Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir everything together and let the sauce gently simmer for about 2–3 minutes. The sauce should begin to thicken slightly while the Parmesan melts into the cream.
  • Return the chicken: Place the cooked chicken back into the skillet and spoon the creamy sauce over the top. Let it simmer gently for another 2–3 minutes so the chicken warms through and absorbs some of the sauce.
  • Add the mozzarella: Sprinkle the shredded mozzarella evenly over the chicken, making sure each piece gets a good layer. Cover the skillet with a lid and let it cook over low heat for about 2–3 minutes, or until the mozzarella has melted. If your skillet is oven-safe, you can also place it under the broiler briefly until the cheese is melted and lightly golden, watching it closely so it doesn’t burn.

How to Store and Reheat Marry Me Chicken with Mozzarella

Store leftover Marry Me Chicken with Mozzarella in an airtight container and refrigerate it within a couple of hours after cooking. The leftovers will keep for about 3–4 days in the refrigerator. Try to keep the chicken, mozzarella, and sauce together when storing so the chicken stays moist and flavorful.

The sauce will naturally become thicker as it cools, and the mozzarella will firm up in the refrigerator. When reheating, I prefer using a skillet over medium-low heat because you can slowly warm the chicken while loosening the sauce. Add a small splash of chicken broth or cream to the skillet and heat gently until the chicken is warmed through.

If the mozzarella has become firm, don’t worry. As the chicken warms, the cheese will soften again. Covering the skillet for a few minutes can help the cheese melt without requiring high heat. If the sauce still looks thick, add another small splash of broth and stir it gently around the chicken.

For a single serving, the microwave is perfectly fine when you need something quick. Place the chicken and sauce in a microwave-safe dish and cover it loosely. Heat in short intervals, checking between each one so the chicken doesn’t become dry. A little broth or cream added before reheating will help keep the sauce smooth.

Avoid reheating this dish over very high heat because the cream and Parmesan sauce can separate, while the chicken can become tough. Gentle heat gives you a much better result. If you have fresh basil or a little Parmesan left, sprinkle some over the reheated chicken before serving to bring back that fresh, just-made flavor.
