Ground Chicken Taco Bowls

Ground Chicken Taco Bowls make taco night a little easier for me because everything goes into one bowl instead of being wrapped in a tortilla. You still get the seasoned chicken, rice, beans, cheese, and fresh toppings, but there is no worrying about tortillas falling apart.

I usually start with the chicken because it cooks quickly and gives me time to prepare the other ingredients while it browns. A few basic taco seasonings are enough to make it flavorful without needing a packet of seasoning.

What I enjoy about these bowls is how easy they are to change. Some days I add avocado and salsa, while other times I keep it simple with cheese, tomatoes, and a squeeze of lime.

They are also practical for meal prep. Keep the warm ingredients separate from the fresh toppings, and you can have an easy lunch ready for the next couple of days.

Ingredients for Ground Chicken Taco Bowls

For the Taco Chicken

  • 1 pound ground chicken, for the main protein.
  • 1/2 small onion, finely chopped.
  • 1 teaspoon chili powder, for taco-style flavor.
  • 1 teaspoon cumin, for warm, savory flavor.
  • 1/2 teaspoon paprika, for color and mild flavor.
  • 1/2 teaspoon garlic powder, for extra seasoning.
  • Salt and black pepper, to taste.
  • 1 tablespoon olive oil, if needed for cooking.

For the Bowls

  • 2 cups cooked rice, white or brown rice both work well.
  • 1 can black beans, drained and rinsed.
  • 1/2 cup corn, canned or frozen.
  • 1/2 cup shredded cheddar cheese, for a cheesy finish.
  • 1 small tomato, diced.
  • 1 avocado, diced or sliced.
  • 1/2 cup salsa, for topping.
  • Lime wedges, optional.

How to Make Ground Chicken Taco Bowls

  • Prepare the toppings first. Drain and rinse the black beans, dice the tomato, cut the avocado, and have the corn and cooked rice ready. Preparing everything before cooking makes assembling the bowls much easier once the chicken is hot.
  • Cook the ground chicken and onion. Heat a large skillet over medium heat and add the ground chicken and chopped onion. Cook for about 6–8 minutes, breaking the chicken apart with a wooden spoon as it cooks until the chicken is no longer pink and the onion has softened.
  • Add the taco seasoning. Sprinkle the chili powder, cumin, paprika, garlic powder, salt, and black pepper over the chicken. Stir thoroughly so the seasoning reaches all of the chicken, then cook for another 1–2 minutes to bring out the flavors.
  • Check that the chicken is cooked through. The chicken should have no pink areas remaining. If you use a food thermometer, check the thickest part of the cooked chicken and make sure it reaches 165°F before removing it from the heat.
  • Warm the beans and corn. Place the black beans and corn in a small saucepan over low heat and warm them for a few minutes, stirring occasionally. You can also heat them together in the microwave until warm, but avoid cooking them for too long because they are already prepared.
  • Warm the rice. Heat the cooked rice until it is warm and fluffy. If refrigerated rice feels dry, add a small splash of water before reheating and cover it loosely so the steam helps soften it.
  • Build the rice base. Divide the warm rice between four bowls and spread it across the bottom. Keeping the rice as the base gives you plenty of room to layer the chicken, beans, and toppings.
  • Add the seasoned chicken. Spoon the cooked taco chicken over the rice, dividing it evenly between the bowls. Try to keep some of the flavorful juices from the skillet with the chicken so the rice gets a little extra moisture.
  • Add the beans and corn. Spoon the warm black beans and corn into each bowl beside the chicken. You can keep each ingredient in its own section or mix them together if you prefer.
  • Add the fresh toppings. Sprinkle shredded cheddar over the warm ingredients, then add the diced tomato and avocado. The warm chicken and rice will soften the cheese slightly while the fresh toppings provide a nice contrast.
  • Finish with salsa and lime. Spoon salsa over each bowl and squeeze fresh lime juice on top. If you like spicy food, add sliced jalapeños or a few drops of hot sauce before serving.
  • Serve while warm. Bring the bowls to the table immediately and let everyone mix the ingredients together as they eat. Add extra cheese, salsa, or lime at the table according to taste.

What to Serve Ground Chicken Taco Bowls

Ground Chicken Taco Bowls are filling enough that you don’t need much alongside them. I usually put extra salsa, lime wedges, and hot sauce on the table so everyone can adjust the flavor.

If you’re serving a larger group, tortilla chips with guacamole make an easy addition. A simple corn salad or fresh fruit can also work well if you want another light side.

For a lower-carb bowl, you can use lettuce as the base instead of rice and add more of the chicken, beans, and fresh vegetables. The taco chicken still provides plenty of flavor.

How to Store and Reheat Ground Chicken Taco Bowls

Store the cooked ground chicken, rice, beans, and corn in separate airtight containers in the refrigerator for up to 3–4 days. Keep the avocado, tomato, salsa, and other fresh toppings separate so they stay fresh.

When you’re ready to eat, reheat the chicken, rice, beans, and corn in the microwave until hot, stirring halfway through. Add a small splash of water or chicken broth to the rice if it has become dry.

Once the warm ingredients are heated, add the fresh toppings and salsa. Finish with fresh lime juice just before serving for a bowl that tastes much fresher than typical leftovers.
