  • Cheddar cheese: Use ½ cup shredded, plus more for serving if you like.

How to Make Chicken Fajita Pasta

  • Cook the pasta: Bring a pot of salted water to a boil and cook the pasta according to the package directions until al dente.
  • Save the pasta water: Before draining, reserve about ½ cup of the cooking water.
  • Season the chicken: Add the chicken pieces to a bowl and season with chili powder, paprika, cumin, garlic powder, salt, and black pepper.
  • Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5 to 6 minutes, stirring occasionally, until browned and cooked through.

You can also serve it with warm tortillas or crusty bread if you want something to scoop up the extra sauce. For a more fajita-style dinner, add a small bowl of salsa, guacamole, or sour cream to the table.

Corn is another easy side. Grilled corn, roasted corn, or even a simple corn salad works nicely with the smoky seasoning in the pasta.

If you want more vegetables, roasted zucchini or a simple tomato salad would be a good addition. I would not make too many sides, though. The pasta is filling enough to be the main event.

How to Store and Reheat

Store leftover Chicken Fajita Pasta in an airtight container in the refrigerator for 3 to 4 days. Let it cool slightly before transferring it to the refrigerator.

The sauce will thicken as it sits, so add a splash of chicken broth or water before reheating. This helps bring the creamy texture back without making the pasta watery.

For the best results, reheat it in a skillet over low to medium heat. Stir occasionally and add a little extra liquid as needed. A small handful of shredded cheddar can also help make the sauce creamy again.

You can microwave individual portions in short intervals, stirring between each one. Do not overheat the pasta, since the chicken can become dry and the creamy sauce can separate.

Finish reheated portions with a squeeze of fresh lime and a little cilantro. It brightens the leftovers and makes them taste much fresher.
