Cajun Chicken Pasta

Cajun Chicken Pasta is one of those dinners I make when I want something creamy with a little kick. The tender chicken, seasoned pasta, and rich sauce come together in one skillet, making it feel like a proper comfort meal without a lot of fuss.

I like the way Cajun seasoning changes a simple creamy pasta. You get garlic, herbs, and a gentle heat in every bite, while the cream and Parmesan smooth everything out. The sauce is rich without needing a long list of ingredients.

This is also a good recipe to make on a busy evening. Once the chicken is cooked, the sauce comes together quickly, and the pasta does most of the work of turning it into a filling meal.

Sometimes I add bell pepper for a little sweetness and color. Other times I keep it simple with just chicken and pasta. Either way, it is the kind of dinner that usually disappears quickly at my table.

Cajun Chicken Pasta is a creamy pasta dish made with seasoned chicken, pasta, and a flavorful Cajun cream sauce. Cajun seasoning gives the chicken and sauce a warm, smoky, slightly spicy flavor, while Parmesan adds richness.

The dish is easy to adjust depending on how much heat you like. Use a mild Cajun seasoning for a gentler flavor or add a little extra seasoning or red pepper flakes if you prefer more spice.

Ingredients for Cajun Chicken Pasta

For the Chicken and Pasta

  • Chicken breasts: Use 2 small chicken breasts, sliced into thin strips or bite-sized pieces.
  • Pasta: Use about 8 ounces of penne or another short pasta that holds the creamy sauce well.
  • Cajun seasoning: Use about 1 tablespoon. Adjust it based on how spicy your seasoning is.
  • Olive oil: Use 1 tablespoon for cooking the chicken.
  • Bell pepper: Use 1 small bell pepper, sliced thinly. It adds color and a little sweetness.
  • Garlic: Use 2 cloves minced garlic for extra savory flavor.

For the Sauce

  • Heavy cream: Use 1 cup to make the sauce creamy.
  • Chicken broth: Use ½ cup to loosen the sauce and add flavor.
  • Parmesan cheese: Use ½ cup freshly grated Parmesan for a rich, cheesy finish.
  • Butter: Use 1 tablespoon to add a little extra richness.
  • Black pepper: Add to taste.
  • Parsley: A little chopped fresh parsley is optional for serving.

How to Make Cajun Chicken Pasta

  • Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Reserve about ½ cup of pasta water before draining.
  • Season the chicken: Place the sliced chicken in a bowl and coat it evenly with the Cajun seasoning.
  • Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5 to 7 minutes, turning occasionally, until browned and cooked through.
  • Check the chicken: Make sure the chicken reaches 165°F (74°C) in the thickest pieces. Transfer it to a plate.
  • Cook the vegetables: Add the sliced bell pepper to the same skillet and cook for 2 to 3 minutes until slightly softened.
  • Add the garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant.
  • Build the sauce: Add the chicken broth and heavy cream to the skillet. Stir well, scraping up any browned bits from the bottom.
  • Season the sauce: Add a little black pepper and another pinch of Cajun seasoning if you want a stronger flavor.
  • Add the Parmesan: Stir in the Parmesan and butter. Let the sauce gently simmer for 2 to 3 minutes until it begins to thicken.
  • Return the chicken: Add the cooked chicken back to the skillet and stir it into the sauce.
  • Add the pasta: Add the drained pasta and toss gently until it is well coated.
  • Adjust the sauce: If the sauce is too thick, add a small splash of reserved pasta water and stir until smooth.
  • Taste and adjust: Add more Cajun seasoning, black pepper, or Parmesan if needed.
  • Finish and serve: Sprinkle with fresh parsley if using and serve while warm.

What to Serve Cajun Chicken Pasta

Cajun Chicken Pasta is creamy and filling, so I like pairing it with something fresh or lightly cooked. A simple green salad with cucumber and tomatoes gives you a crisp contrast to the rich pasta. Steamed broccoli, roasted asparagus, or sautéed green beans are also good choices and add some color to the plate.

Bread is another easy option, especially if you have extra sauce in the skillet. Warm garlic bread is perfect for soaking up the creamy Cajun sauce. If you want something less rich, serve a piece of toasted sourdough or a simple dinner roll instead.

For a family dinner, I usually put the pasta in a large serving bowl and add a little Parmesan and parsley on top. A simple vegetable side is all you really need to complete the meal. The creamy pasta already has plenty of flavor, so I prefer sides that are fresh and uncomplicated.

If you are serving this for guests, you can also add a light salad and some crusty bread to make the meal feel more complete. For me, the best combination is creamy pasta with a crisp salad because the freshness helps balance the Cajun seasoning and rich sauce.

How to Store and Reheat

Store leftover Cajun Chicken Pasta in an airtight container in the refrigerator for 3 to 4 days. Let the pasta cool slightly before storing, but do not leave it at room temperature for an extended period. Keep it properly chilled once you are finished serving.

The sauce will thicken as it cools, so add a small splash of chicken broth, milk, or water before reheating. Warm the pasta gently in a skillet over medium-low heat, stirring occasionally until the chicken and pasta are heated through. You can also microwave it in 30- to 60-second intervals, stirring between each interval.

Try not to use very high heat because creamy sauces can become thick or separate. Gentle reheating helps keep the sauce smooth and gives the leftovers a much better texture.

If the pasta seems a little dry the next day, add a splash of broth before heating and stir well. Finish with a little fresh Parmesan or parsley if you have some available. I find the leftovers make an easy lunch, especially when the sauce is loosened before reheating.
