Pat the chicken breasts dry with paper towels. If needed, pound them to an even thickness.
Season both sides of the chicken with garlic powder, paprika, onion powder, salt, and black pepper.
In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, and rice vinegar.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken breasts and cook for 5 to 6 minutes per side, until golden brown.
Reduce the heat to medium. Add the butter and minced garlic, then cook for about 30 seconds until fragrant.
Pour the sweet chili sauce mixture into the skillet and spoon it over the chicken as it simmers.
Cook for 2 to 3 more minutes, turning the chicken once, until the sauce thickens and coats the chicken. Cook until the internal temperature reaches 165°F (74°C).
Remove the chicken from the skillet and let it rest for 5 minutes.
Spoon the remaining sauce over the chicken and garnish with sesame seeds and sliced green onions before serving.
