Using a sharp knife, cut a deep pocket into the side of each chicken breast without cutting all the way through.
In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, minced garlic, parsley, and lemon zest until well mixed.
Stuff each chicken breast with half of the ricotta mixture and secure the opening with toothpicks or kitchen twine.
Season both sides of the chicken with garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper.
Heat the olive oil in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken breasts for 3 to 4 minutes per side until lightly golden.
Transfer the skillet to the oven and bake for 15 to 18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove the chicken from the oven and let it rest for 5 minutes.
Carefully remove the toothpicks or twine before serving.
