Stuffed Chicken Breast is a delicious way to turn simple chicken breasts into a dinner that feels a little more special. The chicken is sliced open and filled with a creamy mixture of spinach, cream cheese, garlic, and Parmesan, then seared and baked until golden and tender.

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts Choose similar-sized breasts that are thick enough to cut a pocket into.
  • 1 tablespoon olive oil Used for searing and helping the outside become golden.
  • ½ teaspoon salt Seasons the chicken.
  • ½ teaspoon black pepper Adds mild peppery flavor.
  • ½ teaspoon paprika Adds flavor and helps the chicken brown.
  • ½ teaspoon Italian seasoning Adds herbs that pair with the filling.
For the Creamy Filling
  • 4 ounces cream cheese, softened Creates the creamy base of the filling.
  • 1 cup fresh spinach, finely chopped Adds color, freshness, and mild earthy flavor.
  • ½ cup freshly grated Parmesan cheese Adds rich, savory flavor.
  • 2 cloves garlic, minced Adds fresh garlic flavor.
  • ½ teaspoon Italian seasoning Adds herbal flavor.
  • ¼ teaspoon red pepper flakes, optional Adds a little heat.
  • ¼ teaspoon salt Seasons the filling.

Method
 

  1. Set your oven to 400°F (200°C). Lightly grease a large oven-safe skillet or baking dish. Having the oven ready means you can move the chicken directly from the skillet into the oven when you're ready.
  2. Add the softened cream cheese, chopped spinach, Parmesan cheese, minced garlic, Italian seasoning, salt, and red pepper flakes if using to a bowl. Mix until everything is evenly combined and the spinach is distributed throughout the creamy mixture. I like preparing the filling first because it makes stuffing the chicken much easier and keeps the process organized.
  3. Pat the chicken breasts dry with paper towels. Place each breast on a cutting board and carefully use a sharp knife to cut a pocket horizontally through the thickest part. Don't cut all the way through the chicken. You want to create a pocket that can hold the filling while keeping the outside of the chicken intact.
  4. Season both the outside and inside of each chicken breast with salt, black pepper, paprika, and Italian seasoning. Seasoning the inside is important because it gives the chicken flavor all the way through.
  5. Divide the creamy filling evenly between the four chicken breasts. Carefully spoon the mixture into each pocket, making sure not to overfill them. You want enough filling to give you that creamy center without making it difficult to close the chicken.
  6. Use toothpicks to close the openings if needed. Insert the toothpicks across the opening so the filling stays inside while the chicken cooks. Just remember to remove all toothpicks before serving.
  7. Heat the olive oil in an oven-safe skillet over medium-high heat. Place the stuffed chicken breasts into the hot skillet and cook for about 2–3 minutes per side, or until the outside is nicely golden brown. You don't need to cook the chicken completely at this stage because it will finish in the oven.
  8. Place the skillet directly into the preheated oven. If you're not using an oven-safe skillet, transfer the chicken to a lightly greased baking dish before baking.
  9. Bake the chicken for about 15–20 minutes, depending on the thickness of the breasts. The chicken should reach an internal temperature of 165°F (74°C) in the thickest part. The exact cooking time will vary, so a meat thermometer is the most reliable way to check.
  10. Make sure the center is hot and the cream cheese filling is soft and creamy. If the chicken needs more time but the outside is already very golden, loosely cover it with foil and continue baking.
  11. Remove the chicken from the oven and let it rest for about 5 minutes before cutting into it. This gives the juices time to settle and allows the filling to cool slightly so it doesn't immediately spill out when you slice the chicken.
  12. Carefully remove all toothpicks before serving. I like checking each piece twice because a hidden toothpick is definitely not the surprise anyone wants at dinner.
  13. Slice the chicken carefully and serve while warm. Cutting it on a slight angle makes the creamy spinach filling easier to see, which also makes the dish look extra inviting on the plate.
