Ingredients
Method
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and black pepper until well combined.
- Add the mixed greens, chicken, cherry tomatoes, cucumber, chickpeas, red onion, feta cheese, olives, and parsley to a large salad bowl.
- Drizzle the dressing over the salad.
- Toss gently until everything is evenly coated.
- Taste and adjust the seasoning if needed.
- Serve immediately with warm pita bread or on its own.
Notes
- Drain and pat the chickpeas dry before adding them to the salad so they don't water down the dressing.
- Use freshly squeezed lemon juice for the dressing. It gives a brighter flavor than bottled juice.
- Toss the salad just before serving to keep the greens crisp and the feta from becoming too soft.
- If preparing ahead, store the dressing separately and assemble the salad right before serving for the freshest texture.
- Grilled or rotisserie chicken both work well, but let the chicken cool slightly before adding it to the greens to prevent them from wilting.
