Ingredients
  

  • 2 boneless skinless chicken breasts, cooked and sliced
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup chickpeas drained and rinsed
  • ¼ cup red onion thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup Kalamata olives pitted and halved
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and black pepper until well combined.
  2. Add the mixed greens, chicken, cherry tomatoes, cucumber, chickpeas, red onion, feta cheese, olives, and parsley to a large salad bowl.
  3. Drizzle the dressing over the salad.
  4. Toss gently until everything is evenly coated.
  5. Taste and adjust the seasoning if needed.
  6. Serve immediately with warm pita bread or on its own.

Notes

  • Drain and pat the chickpeas dry before adding them to the salad so they don't water down the dressing.
  • Use freshly squeezed lemon juice for the dressing. It gives a brighter flavor than bottled juice.
  • Toss the salad just before serving to keep the greens crisp and the feta from becoming too soft.
  • If preparing ahead, store the dressing separately and assemble the salad right before serving for the freshest texture.
  • Grilled or rotisserie chicken both work well, but let the chicken cool slightly before adding it to the greens to prevent them from wilting.
