Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 garlic cloves minced
  • cups cherry tomatoes halved
  • ¼ cup chicken broth
  • ¼ cup fresh basil leaves chopped
  • ¼ cup freshly grated Parmesan cheese optional
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon balsamic vinegar optional
  • Fresh basil leaves for garnish (optional)

Method
 

  1. Pat the chicken breasts dry with paper towels. If they are thick, pound them to an even thickness.
  2. In a small bowl, combine the Italian seasoning, paprika, garlic powder, salt, and black pepper.
  3. Rub the chicken breasts with olive oil and coat both sides evenly with the seasoning mixture.
  4. Heat a large skillet over medium-high heat. Cook the chicken for 5 to 6 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
  5. Reduce the heat to medium and melt the butter in the same skillet. Add the minced garlic and cook for about 30 seconds until fragrant.
  6. Add the cherry tomatoes and cook for 4 to 5 minutes, stirring occasionally, until they begin to soften and release their juices.
  7. Stir in the chicken broth and balsamic vinegar, if using. Simmer for 2 minutes.
  8. Return the chicken to the skillet. Sprinkle the Parmesan cheese over the chicken, if using, and spoon the tomato mixture on top.
  9. Cook for another 3 to 4 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  10. Stir in the chopped fresh basil just before serving. Garnish with extra basil leaves and serve immediately.

Notes

  • Fresh basil adds the best flavor, so add it at the end of cooking.
  • Cherry tomatoes create a naturally sweet, juicy sauce, but diced Roma tomatoes can also be used.
  • Add a pinch of red pepper flakes for a little heat.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Serve with pasta, rice, mashed potatoes, roasted vegetables, or crusty bread to soak up the flavorful tomato sauce.
