Pat the chicken breasts dry with paper towels. If needed, pound them to an even thickness.
In a small bowl, combine the Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
Rub the chicken breasts with olive oil, then season both sides evenly with the spice mixture.
Heat a large skillet over medium-high heat. Cook the chicken for 5 to 6 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
Reduce the heat to medium and melt the butter in the same skillet. Add the minced garlic and cook for about 30 seconds until fragrant.
Stir in the fresh spinach and cook for 2 to 3 minutes until wilted.
Pour in the chicken broth and heavy cream, then stir in the Parmesan cheese. Simmer for 2 to 3 minutes until the sauce is smooth and slightly thickened.
Return the chicken breasts to the skillet and spoon the creamy spinach sauce over the top.
Continue cooking for 2 to 3 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
