Preheat the oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels. If they are thick, pound them to an even thickness.
In a small bowl, mix the Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
Rub the chicken with olive oil and coat both sides evenly with the seasoning mixture.
Heat a large skillet over medium-high heat. Sear the chicken for 2 to 3 minutes per side until lightly golden. Transfer the chicken to a baking dish.
In the same skillet, melt the butter. Add the sliced mushrooms and cook for 5 minutes until they begin to brown.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the chicken broth and heavy cream, then stir in the Parmesan cheese. Simmer for 2 to 3 minutes until the sauce begins to thicken.
Pour the mushroom sauce over the chicken in the baking dish.
Bake for 18 to 22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Let the chicken rest for 5 minutes before serving. Spoon the mushroom sauce over the chicken and garnish with fresh parsley.
