Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • 1 tablespoon chopped fresh parsley optional, for garnish
  • Lemon wedges for serving (optional)

Method

  1. Pat the chicken breasts dry with paper towels. If needed, pound them to an even thickness.
  2. In a small bowl, combine the Italian seasoning, garlic powder, onion powder, oregano, basil, paprika, salt, black pepper, and grated Parmesan cheese.
  3. Rub the chicken breasts with olive oil, then coat both sides evenly with the seasoning mixture.
  4. Heat a large skillet over medium-high heat.
  5. Add the chicken breasts and cook for 5 to 6 minutes per side until golden brown.
  6. During the final minute of cooking, add the butter and spoon the melted butter over the chicken.
  7. Continue cooking until the internal temperature reaches 165°F (74°C).
  8. Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
  9. Garnish with fresh parsley and serve with lemon wedges if desired.

Notes

  • Freshly grated Parmesan melts better and adds more flavor than pre-shredded cheese.
  • Let the chicken rest before slicing to keep it juicy.
  • Use a meat thermometer to prevent overcooking.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Serve with pasta, roasted potatoes, steamed vegetables, Caesar salad, or garlic bread.
