Honey Mustard Chicken Thighs

Ingredients
  

For the Chicken
  • 4 chicken thighs Use boneless or bone-in thighs. If using skin-on thighs, pat them very dry so they brown nicely.
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For the Honey Mustard Sauce
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2 cloves garlic
  • ½ cup chicken broth
  • 1 tablespoon butter

Method
 

  1. Pat the chicken thighs dry with paper towels so they brown well in the skillet.
  2. Season both sides of the chicken thighs with salt and black pepper.
  3. In a small bowl, whisk together the honey, Dijon mustard, minced garlic, and chicken broth until smooth.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the chicken thighs and cook for about 4–6 minutes on the first side, until golden brown.
  6. Flip the chicken and cook for another 4–5 minutes until the second side is browned.
  7. Reduce the heat to medium and pour the honey mustard sauce into the skillet around the chicken.
  8. Add the butter to the sauce and stir gently as it melts into the mixture.
  9. Simmer the chicken in the sauce for about 6–8 minutes, turning it once or twice so the sauce coats the thighs evenly.
  10. Continue cooking until the chicken reaches 165°F (74°C) and the sauce has thickened into a light glaze.
  11. Let the chicken rest for a few minutes, then spoon the warm honey mustard sauce over each thigh before serving.
