Ingredients

For the Chicken
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Honey Mustard Sauce
  • ½ cup Dijon mustard
  • ¼ cup honey
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme

Method

  1. Preheat the oven to 400°F (200°C) and lightly grease an oven-safe skillet or baking dish.
  2. Pat the chicken breasts dry and gently pound thick pieces to an even thickness.
  3. Season both sides of the chicken evenly with garlic powder, paprika, salt, and black pepper.
  4. Whisk the Dijon mustard, honey, mayonnaise, apple cider vinegar, garlic, olive oil, smoked paprika, and thyme until smooth and creamy.
  5. Heat an oven-safe skillet over medium-high heat and sear the chicken for 2–3 minutes per side until golden.
  6. Turn off the heat and generously brush the honey mustard sauce over the chicken, saving some sauce for serving if desired.
  7. Transfer the skillet to the oven, or move the chicken to a baking dish if needed.
  8. Bake for 15–20 minutes until the chicken reaches 165°F (74°C) in the thickest part and the sauce becomes glossy.
  9. Brush on another layer of sauce during the final few minutes if you want a thicker coating.
  10. Broil for 1–2 minutes for darker caramelized edges, watching closely because the honey can brown quickly.
  11. Remove from the oven and let the chicken rest for 5 minutes.
  12. Slice and serve with the warm honey mustard sauce, adding fresh parsley if desired.
