Pat the chicken thighs dry with paper towels.

Rub the chicken thighs with olive oil, then season both sides evenly with the spice mixture.

Stir in the honey, soy sauce, apple cider vinegar, and Dijon mustard. Bring the sauce to a gentle simmer.
In a small bowl, whisk together the cornstarch and water. Stir the slurry into the sauce and cook for 1 to 2 minutes, until slightly thickened.
Return the chicken thighs to the skillet and spoon the honey garlic sauce over them.
Simmer for 5 to 7 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is glossy.
Garnish with chopped parsley and sesame seeds if desired before serving.
