  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup low-fat cottage cheese
  • ½ cup grated Parmesan cheese
  • ½ cup milk
  • 2 garlic cloves
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon black pepper
  • 2 cups fresh spinach
  • 2 tablespoons chopped fresh parsley

Method

  1. Bring a large pot of salted water to a boil.
  2. Cook the high-protein pasta according to the package directions until al dente. Reserve ½ cup pasta water, then drain.
  3. Season the chicken with garlic powder, Italian seasoning, paprika, salt, and black pepper.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Cook the chicken for 6 to 8 minutes, stirring occasionally, until browned and fully cooked.
  6. Add the cottage cheese, Parmesan, milk, garlic, lemon juice, and black pepper to a blender.
  7. Blend until completely smooth and creamy.
