Ingredients
  

  • 2 boneless skinless chicken breasts, cooked and diced
  • 2 celery stalks finely diced
  • ¼ cup red onion finely diced
  • ¼ cup diced cucumber
  • 2 tablespoons chopped fresh parsley
  • ½ cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. In a small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, honey, garlic powder, salt, and black pepper until smooth.
  2. Add the cooked chicken, celery, red onion, cucumber, and parsley to a large mixing bowl.
  3. Pour the dressing over the chicken mixture.
  4. Stir gently until everything is evenly coated.
  5. Taste and adjust the seasoning if needed.
  6. Cover and refrigerate for at least 20 minutes to allow the flavors to develop.
  7. Serve chilled in lettuce wraps, on whole grain bread, with crackers, or over a bed of mixed greens.
