Ingredients
  

  • 2 pounds ground chicken
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 small onion finely diced
  • 3 garlic cloves minced
  • ¼ cup milk
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup ketchup for the glaze
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, eggs, onion, garlic, milk, ketchup, Worcestershire sauce, Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Mix until just combined, being careful not to overmix.
  4. Shape the mixture into a loaf and place it in the prepared loaf pan or on the baking sheet.
  5. In a small bowl, stir together the ketchup, brown sugar, and Dijon mustard.
  6. Spread the glaze evenly over the top of the meatloaf.
  7. Bake for 45 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

    • Avoid overmixing the meat mixture to keep the meatloaf tender.
    • Use fresh breadcrumbs for a softer texture if preferred.
    • Add finely chopped carrots or bell peppers for extra flavor and nutrition.
