Ingredients
  

  • 1 pound ground chicken
  • ½ cup plain breadcrumbs
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • 2 garlic cloves minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, Parmesan cheese, garlic, parsley, Italian seasoning, garlic powder, onion powder, paprika, salt, black pepper, and olive oil.
  3. Mix until just combined. Do not overmix.
  4. Roll the mixture into 20 to 24 evenly sized meatballs and place them on the prepared baking sheet.
  5. Bake for 18 to 20 minutes, or until the meatballs are lightly browned and reach an internal temperature of 165°F (74°C).
  6. Let the meatballs rest for 5 minutes before serving.
  7. Serve with marinara sauce, pasta, rice, mashed potatoes, or roasted vegetables.

Notes

  • Wet your hands slightly before rolling the meatballs to prevent sticking.
  • Avoid overmixing the meat mixture to keep the meatballs tender.
  • Add crushed red pepper flakes for a little heat.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze cooked meatballs for up to 3 months and reheat as needed.
