Ground Chicken Lettuce Wraps

Ingredients
  

  • 1 pound ground chicken
  • 1 tablespoon sesame oil
  • 1 small onion finely diced
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • ΒΌ cup low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 2 green onions sliced
  • 1 tablespoon chopped fresh cilantro optional
  • 1 teaspoon sesame seeds optional
  • 1 head butter lettuce or iceberg lettuce leaves separated

Method
 

  1. Heat 1 tablespoon of sesame oil in a large skillet over medium heat.
  2. Add the onion and cook for 3 to 4 minutes until softened.
  3. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
  4. Add the ground chicken and cook for 6 to 8 minutes, breaking it apart until fully cooked.
  5. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, honey, and 1 teaspoon sesame oil.
  6. Pour the sauce into the skillet and stir to coat the chicken.
  7. Mix the cornstarch with the water, then stir it into the skillet. Cook for 2 to 3 minutes until the sauce thickens.
  8. Stir in the sliced green onions.
  9. Spoon the chicken mixture into the lettuce leaves.
  10. Garnish with cilantro and sesame seeds before serving.

Notes

  • Butter lettuce and iceberg lettuce both work well for sturdy wraps.
  • Add diced water chestnuts or shredded carrots for extra crunch.
  • Adjust the soy sauce to suit your taste.
  • Store the chicken filling separately from the lettuce for up to 4 days.
  • Serve with steamed rice or cauliflower rice for a complete meal.
