Ground Chicken Bowls

Ingredients
  

  • 1 pound ground chicken
  • 1 tablespoon sesame oil
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 3 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup cucumber diced
  • 1 cup steamed broccoli
  • 2 green onions sliced
  • 1 teaspoon sesame seeds optional

Method
 

  1. Heat 1 tablespoon of sesame oil in a large skillet over medium heat.
  2. Add the diced onion and cook for 3 to 4 minutes until softened.
  3. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
  4. Add the ground chicken and cook for 6 to 8 minutes, breaking it apart until fully cooked.
  5. In a small bowl, whisk together the soy sauce, honey, rice vinegar, 1 teaspoon sesame oil, cornstarch, and water.
  6. Pour the sauce into the skillet and stir until the chicken is evenly coated.
  7. Simmer for 2 to 3 minutes until the sauce thickens slightly.
  8. Divide the cooked rice among four bowls.
  9. Top each bowl with the ground chicken, shredded carrots, cucumber, and steamed broccoli.
  10. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Brown rice or cauliflower rice can be used instead of white rice.
  • Add avocado, edamame, or sautéed mushrooms for extra flavor and texture.
  • Drizzle with sriracha or spicy mayo for added heat.
  • Store leftovers in separate airtight containers in the refrigerator for up to 4 days.
  • Assemble the bowls just before serving for the freshest texture.
