Ingredients
  

  • 2 boneless skinless chicken breasts, cooked and sliced
  • 1 large romaine lettuce chopped
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ cup red onion thinly sliced
  • ½ cup Kalamata olives pitted and halved
  • ½ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and black pepper until well combined.
  2. Add the romaine lettuce, cucumber, cherry tomatoes, red onion, olives, feta cheese, parsley, and sliced chicken to a large salad bowl.
  3. Drizzle the dressing over the salad.
  4. Toss gently until everything is evenly coated with the dressing.
  5. Taste and adjust the seasoning if needed.
  6. Serve immediately with warm pita bread or on its own.

Notes

  • Use freshly squeezed lemon juice for the brightest, freshest flavor in the dressing.
  • Pat the lettuce and vegetables completely dry before assembling the salad so the dressing coats everything instead of sliding off.
  • Toss the salad just before serving to keep the lettuce crisp and the feta from breaking down.
  • Marinated grilled chicken adds even more flavor, but rotisserie chicken is a great shortcut for busy days.
