Crockpot Chicken Thighs

Ingredients
  

For the Chicken
  • 4 chicken thighs Use bone-in or boneless thighs.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
For the Crockpot
  • ½ cup chicken broth
  • 2 cloves garlic
  • 1 small onion

Method
 

  1. Pat the chicken thighs dry with paper towels. Removing excess moisture helps the seasonings stick better to the chicken.
  2. In a small bowl, mix the salt, black pepper, garlic powder, paprika, and Italian seasoning. Rub the seasoning all over the chicken thighs so they are evenly coated.
  3. Add the sliced onion and garlic to the bottom of the crockpot, then pour in the chicken broth. The liquid does not need to completely cover the chicken.
  4. Place the seasoned chicken thighs on top of the onions and drizzle the olive oil over the chicken.
  5. Cover the crockpot and cook on LOW for 5–6 hours or HIGH for about 3–4 hours, depending on the size of the thighs and your slow cooker. The chicken should reach at least 165°F (74°C) internally.
  6. Use a meat thermometer to check the thickest part of the chicken without touching the bone if using bone-in thighs. Once it reaches a safe temperature and is tender, it is ready.
  7. For a more golden, slightly crisp top, transfer the cooked thighs to a baking sheet and place them under the broiler for 2–3 minutes. Watch closely because they can brown quickly.
  8. Let the chicken rest for about 5 minutes before serving so the juices can settle back into the meat.
  9. Spoon some of the flavorful cooking juices over the chicken before serving.
