Crockpot Chicken Noodle Soup

Ingredients
  

For the Soup
  • 1 chicken breast about 1 to 1½ pounds
  • 6 cups chicken broth
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • salt and black pepper to taste
For the Noodles and Finish
  • 2 cups egg noodles
  • fresh parsley chopped
  • lemon juice optional

Method
 

  1. Prepare the vegetables: Slice the carrots and celery, dice the onion, and mince the garlic.
  2. Add everything: Place chicken in the crockpot and add vegetables, garlic, and chicken broth.
  3. Season: Add Italian seasoning, bay leaf, salt, and black pepper.
  4. Slow cook: Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until the chicken is tender and cooked through.
  5. Shred chicken: Remove the chicken, let it cool briefly, then shred it into bite-sized pieces.
  6. Return chicken: Stir the shredded chicken back into the crockpot and adjust seasoning.
  7. Add noodles: Turn to HIGH, add egg noodles, and cook covered for about 20 to 30 minutes until tender.
  8. Finish: Remove the bay leaf, stir in parsley, add lemon juice if desired, and serve hot.
