Rub the chicken thighs with olive oil, then coat them evenly with the seasoning mixture.
Arrange the chicken thighs on the wire rack in a single layer, leaving space between each piece.
Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
For extra crispy edges, broil the chicken for 2 to 3 minutes at the end of cooking, watching carefully to prevent burning.
Remove the chicken from the oven and let it rest for 5 minutes.
Garnish with chopped fresh parsley and serve with lemon wedges if desired.
