Ingredients
  

  • 2 boneless skinless chicken breasts, cooked and sliced
  • 6 cups chopped romaine lettuce
  • 4 slices bacon cooked and crumbled
  • 2 hard-boiled eggs sliced
  • 1 ripe avocado diced
  • 1 cup cherry tomatoes halved
  • ½ cup crumbled blue cheese
  • ¼ cup red onion thinly sliced
  • 2 tablespoons chopped fresh chives
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and black pepper until well combined.
  2. Arrange the chopped romaine lettuce on a large serving platter or divide it among four bowls.
  3. Top the lettuce with rows of sliced chicken, bacon, hard-boiled eggs, avocado, cherry tomatoes, blue cheese, and red onion.
  4. Drizzle the dressing over the salad or serve it on the side.
  5. Sprinkle with the fresh chives.
  6. Serve immediately.

Notes

  • Cook the bacon until crisp, then drain it on paper towels before crumbling. This keeps it crunchy even after it's added to the salad.
  • Use ripe but firm avocados so they hold their shape instead of becoming mushy when tossed.
  • Pat the lettuce completely dry after washing. Dry greens help the dressing coat the salad evenly without becoming watery.
  • If making the salad ahead, keep the dressing, avocado, and bacon separate until just before serving to maintain the best texture.
