Ingredients
Method
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and black pepper until well combined.
- Arrange the chopped romaine lettuce on a large serving platter or divide it among four bowls.
- Top the lettuce with rows of sliced chicken, bacon, hard-boiled eggs, avocado, cherry tomatoes, blue cheese, and red onion.
- Drizzle the dressing over the salad or serve it on the side.
- Sprinkle with the fresh chives.
- Serve immediately.
Notes
- Cook the bacon until crisp, then drain it on paper towels before crumbling. This keeps it crunchy even after it's added to the salad.
- Use ripe but firm avocados so they hold their shape instead of becoming mushy when tossed.
- Pat the lettuce completely dry after washing. Dry greens help the dressing coat the salad evenly without becoming watery.
- If making the salad ahead, keep the dressing, avocado, and bacon separate until just before serving to maintain the best texture.
- For the best presentation, arrange the toppings in rows over the lettuce and toss individual servings with dressing just before eating.
