Ingredients
  

  • 2 tablespoons butter
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion diced
  • 3 garlic cloves minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter melted
  • 1 cup whole milk

Method
 

  1. Melt the butter in a large pot over medium heat.
  2. Add the chicken and cook for 5 to 6 minutes until lightly browned. Transfer to a plate.
  3. Add the onion, carrots, and celery to the pot. Cook for 4 to 5 minutes until softened.
  4. Stir in the garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and add the thyme, parsley, salt, and black pepper. Bring to a boil.
  6. Return the chicken to the pot, reduce the heat to a simmer, and cook for 10 minutes.
  7. In a medium bowl, whisk together the flour, baking powder, and salt. Stir in the melted butter and milk until just combined. Do not overmix.
  8. Drop tablespoon-sized portions of the dumpling dough onto the simmering soup.
  9. Cover the pot with a tight-fitting lid and cook for 15 minutes without lifting the lid.
  10. Sprinkle with fresh parsley and serve hot.

Notes

  • Mix the dumpling dough just until the ingredients are combined. Overmixing can make the dumplings dense instead of light and fluffy.
  • Keep the soup at a gentle simmer while the dumplings cook. A rolling boil can cause them to break apart.
  • Resist lifting the lid while the dumplings are cooking. The trapped steam is what helps them cook through and become fluffy.
  • To check for doneness, cut one dumpling in half. The center should be cooked through with no wet batter remaining.
  • Leftover dumplings will continue to absorb broth during storage. When reheating, add a little extra chicken broth to loosen the soup if needed.
