Ingredients
  

  • 2 boneless skinless chicken breasts, cooked and diced
  • ¼ cup Buffalo sauce
  • 1 tablespoon melted butter
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup shredded carrots
  • ¼ cup red onion thinly sliced
  • ½ cup crumbled blue cheese
  • ¼ cup ranch dressing
  • 2 tablespoons chopped green onions

Method
 

  1. In a medium bowl, toss the cooked chicken with the Buffalo sauce and melted butter until evenly coated.
  2. Add the chopped romaine lettuce, cherry tomatoes, cucumber, shredded carrots, and red onion to a large salad bowl.
  3. Top the salad with the Buffalo chicken and crumbled blue cheese.
  4. Drizzle the ranch dressing over the salad or serve it on the side.
  5. Sprinkle with the chopped green onions.
  6. Toss just before serving or leave the ingredients layered for presentation.

Notes

  • Toss the chicken with the Buffalo sauce while it's still slightly warm so it absorbs more flavor.
  • Adjust the heat level by using mild, medium, or hot Buffalo sauce. You can also mix the sauce with a little extra melted butter for a milder flavor.
  • If you're serving the salad later, keep the dressing separate until just before eating to prevent the lettuce from becoming soggy.
  • Blue cheese is traditional, but crumbled feta or shredded cheddar can be used if you prefer a milder flavor.
