How to Make Ranch Chicken and Mashed Potatoes

  • Prepare the potatoes: Peel the potatoes if desired and cut them into evenly sized chunks. Try to keep the pieces around the same size so they finish cooking at the same time.

  • Heat the skillet: Place a large skillet over medium-high heat and add the olive oil. Let the oil heat properly before adding the chicken. A hot skillet helps the chicken develop a flavorful golden crust.
  • Sear the chicken: Place the chicken breasts in the skillet and cook for about 4–5 minutes per side, or until golden brown. The chicken doesn’t need to be completely cooked yet because it will finish later. Transfer the chicken to a clean plate and set it aside.
  • Finish the potatoes: Once the potatoes are fork-tender, drain them well and let them sit in the hot pot for about a minute. This allows excess moisture to evaporate and helps prevent watery mashed potatoes.
  • Mash the potatoes: Add the butter, warm milk, salt, and black pepper to the potatoes. Mash until smooth and creamy. Avoid overmixing because too much stirring can make mashed potatoes sticky and heavy. If they are too thick, add a little more warm milk until they reach the consistency you like.
