How to Make Mexican Chicken Casserole
- Preheat the oven to 375°F and prepare the baking dish. Lightly grease a 9×13-inch casserole dish with cooking spray or a little oil so the chicken mixture does not stick while baking.
- Prepare the chicken mixture. Add the cooked chicken, salsa, black beans, corn, sour cream, taco seasoning, and diced onion to a large bowl. Stir everything together until the chicken is evenly coated and the beans and corn are spread throughout the mixture.

For individual portions, the microwave is the easiest option. Heat one serving for about 1–2 minutes, then continue in short intervals until the center is hot. If the casserole seems a little dry, add a spoonful of salsa before reheating to bring back some moisture and flavor.
For a larger amount, cover the casserole with foil and warm it in a 350°F oven until heated through. Remove the foil during the last few minutes if you want the cheese on top to become bubbly again.
