Honey Soy Chicken Thighs

Honey Soy Chicken Thighs came together for me on one of those nights when I wanted something flavorful but did not want to spend a lot of time cooking. The sauce takes just a few minutes to mix, and once it hits the hot skillet, it turns into a rich, glossy coating for the chicken.

I like using chicken thighs for this because they stay juicy and have enough flavor to stand up to the sweet and salty sauce. Browning them first also gives the chicken those little caramelized edges that make every bite better.

The honey brings sweetness, while the soy sauce gives the dish that deep savory flavor. A little garlic and ginger round everything out without making the ingredient list complicated.

Serve these over rice with a simple vegetable, and you have a dinner that feels much more impressive than the amount of work that went into it.

What Is Honey Soy Chicken Thighs

Honey Soy Chicken Thighs are chicken thighs cooked in a simple sauce made with honey, soy sauce, garlic, ginger, and a few other basic ingredients. The chicken is browned first, then simmered in the sauce until it is cooked through and coated in a shiny, flavorful glaze.

The key is letting the sauce reduce enough to cling to the chicken. You want it thick and glossy, but not so thick that it starts sticking or burning in the pan.

Boneless, skinless chicken thighs work especially well because they cook fairly quickly and stay tender. You can also use bone-in thighs, but they will need more cooking time.

Ingredients for Honey Soy Chicken Thighs

For the Chicken

  • 4 boneless, skinless chicken thighs: Four thighs are enough for a family dinner, but you can easily use two for a smaller meal. Pat them dry before seasoning so they brown nicely in the skillet.
  • 1/2 teaspoon salt: Adds basic seasoning to the chicken. Use a little less if your soy sauce is particularly salty.
  • 1/4 teaspoon black pepper: Adds a mild peppery bite that balances the sweetness of the honey.
  • 1 tablespoon olive oil: Helps the chicken develop a golden-brown exterior without sticking to the pan.

For the Honey Soy Sauce

  • 1/4 cup soy sauce: Provides the salty, savory base of the sauce. Regular soy sauce works well, while low-sodium soy sauce gives you more control over the salt.
  • 3 tablespoons honey: Gives the sauce its sweetness and helps create that sticky, glossy coating as it cooks down.
  • 2 cloves garlic, minced: Adds fresh savory flavor and makes the sauce more aromatic.
  • 1 teaspoon fresh grated ginger: Brings a warm, slightly spicy flavor that works especially well with honey and soy.
  • 1/2 cup chicken broth: Adds enough liquid for the chicken to simmer while keeping the sauce from becoming too salty or thick too quickly.
  • 1 tablespoon rice vinegar: Adds a little acidity to balance the sweetness and saltiness of the sauce.
  • 1 teaspoon sesame oil: Adds a nutty flavor that gives the finished dish a more complete Asian-inspired taste.
  • 1 teaspoon cornstarch: Helps the sauce thicken at the end so it coats the chicken instead of remaining watery.
  • 1 tablespoon water: Used to mix with the cornstarch and make a smooth slurry before adding it to the sauce.

For Finishing

  • 1 green onion: Sliced green onion adds freshness and a little crunch on top of the tender chicken.
  • 1 teaspoon sesame seeds: Adds a light nutty flavor and makes the finished chicken look more inviting. These are optional.

How to Make Honey Soy Chicken Thighs

  • Prepare the chicken: Pat the chicken thighs dry with paper towels, then season both sides with salt and black pepper. Drying the surface first is important because excess moisture can prevent the chicken from getting that deep golden-brown color.
  • Mix the sauce: In a small bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, chicken broth, rice vinegar, and sesame oil. Stir until the honey is fully mixed into the liquid so the sauce is ready to pour into the skillet later.
  • Heat the skillet: Place a large skillet over medium-high heat and add the olive oil. Give the pan a couple of minutes to heat properly before adding the chicken. You should hear a steady sizzle when the chicken touches the pan.
  • Brown the chicken: Place the chicken thighs in the hot skillet in a single layer. Cook for about 4 to 5 minutes on the first side without moving them too much, then flip and cook for another 3 to 4 minutes. The chicken should have a deep golden color on both sides, although it does not need to be fully cooked yet.
  • Add the sauce: Reduce the heat to medium and pour the honey soy sauce into the skillet around the chicken. Use a wooden spoon or spatula to gently scrape up the browned bits from the bottom of the pan because they add extra flavor to the sauce.
  • Simmer the chicken: Let the chicken simmer in the sauce for about 8 to 10 minutes, turning the thighs once or twice during cooking. Spoon the sauce over the chicken as it cooks so the surface becomes coated and flavorful.
  • Make the cornstarch slurry: While the chicken is simmering, stir the cornstarch with one tablespoon of water in a small bowl until completely smooth. Making the slurry separately prevents dry cornstarch from forming lumps in the sauce.
  • Thicken the sauce: Once the chicken is nearly cooked through, slowly stir the cornstarch mixture into the simmering sauce. Continue cooking for about 1 to 2 minutes, stirring gently, until the sauce becomes thicker and glossy enough to coat the back of a spoon.
  • Check the chicken: Use a meat thermometer to check the thickest part of the chicken. It should reach 165°F before you remove it from the heat. If the thighs are larger than usual, give them a few additional minutes in the sauce until fully cooked.
  • Coat the chicken: Turn the chicken several times in the thickened sauce and spoon the glaze over the top. Let it simmer for another minute if needed, but watch the heat closely because the honey can burn if the sauce gets too hot.
  • Finish the dish: Remove the skillet from the heat and sprinkle the chicken with sliced green onion and sesame seeds if using. Let the chicken sit in the sauce for a couple of minutes so the glaze settles onto the surface.
  • Serve warm: Place the chicken over rice or alongside your favorite vegetables, then spoon some of the remaining honey soy sauce from the skillet over each serving. That extra sauce is worth using because it adds plenty of flavor to the rice as well.

What to Serve Honey Soy Chicken Thighs With

I usually serve these chicken thighs over steamed white rice or jasmine rice because the rice soaks up the sweet and savory sauce beautifully. Brown rice also works if you prefer something with a little more texture.

For vegetables, steamed broccoli, green beans, carrots, or snap peas are all easy choices. I like something slightly crisp or fresh alongside the tender chicken because it keeps the meal from feeling too heavy.

You can also serve the chicken with noodles if you want to change things up. Tossing the noodles with a little of the extra honey soy sauce gives you an easy side without needing another complicated recipe.

How to Store and Reheat Honey Soy Chicken Thighs

Store leftover chicken and sauce together in an airtight container in the refrigerator for up to 3 to 4 days. Keeping the chicken with the sauce helps it stay moist and gives you an easy meal to reheat later.

For the best results, reheat the chicken gently in a skillet over medium-low heat. Add a small splash of chicken broth or water if the sauce has become very thick, then cover the skillet and heat until the chicken is warmed through. Turn the chicken a couple of times so the sauce coats it evenly.

You can also reheat individual portions in the microwave. Cover the chicken loosely and heat in short intervals, adding a splash of water if needed. Avoid overheating because the honey-based sauce can become very thick and sticky when cooked for too long.
