Garlic Herb Chicken Bites are one of those recipes where the skillet does almost all the work. Small pieces of chicken cook quickly, then get coated in butter, garlic, and herbs until every piece is golden on the outside and juicy in the middle.

I like cutting the chicken into small bites instead of cooking one large piece. You get more browned edges this way, and those little golden pieces pick up the garlic butter really well.

The ingredient list is short, but the flavor doesn’t feel that way. Fresh garlic and butter make the biggest difference, while a few dried herbs round everything out.

These are also easy to fit into whatever meal you’re making. Serve them over rice, tuck them into a wrap, add them to a salad, or just put the skillet on the table and let everyone grab a few.

The quick cooking time is probably the first thing you’ll notice. Because the chicken is cut into small pieces, it cooks much faster than a whole chicken breast, making this a useful recipe when dinner needs to happen without much waiting.

For the Chicken

  • 1 large boneless, skinless chicken breast: One large breast gives you enough chicken for about four servings when served with sides. Cut it into small, even pieces so everything cooks at the same rate.
  • 1 tablespoon olive oil: Olive oil helps the chicken brown in the hot skillet and has a high enough smoke point for searing.
  • 1/2 teaspoon salt: Salt seasons the chicken from the beginning and helps bring out its natural flavor.
  • 1/4 teaspoon black pepper: Black pepper adds a little warmth and balances the buttery garlic flavor.
  • 1/2 teaspoon paprika: Paprika adds mild sweetness, a little color, and extra savory flavor without making the chicken spicy.
  • 1/2 teaspoon dried Italian seasoning: Italian seasoning gives the chicken a simple herb flavor that works well with garlic and butter.

For the Garlic Herb Butter

  • 2 tablespoons butter: Butter creates the rich sauce that coats the chicken and helps the garlic and herbs cling to every bite.
  • 3 cloves garlic, minced: Fresh garlic provides the main flavor. Mince it finely so it spreads evenly through the butter.
  • 1/2 teaspoon dried thyme: Thyme adds a warm, earthy herb flavor that works especially well with chicken.

How to Make Garlic Herb Chicken Bites

  • Prepare the chicken: Pat the chicken breast dry with paper towels, then cut it into small bite-sized pieces, aiming for pieces that are roughly the same size. Drying the chicken first is important because excess moisture can prevent the outside from browning properly.
  • Season the chicken: Place the chicken pieces in a bowl and add the salt, black pepper, paprika, and Italian seasoning. Toss everything together until the chicken is evenly coated. Let it sit for a few minutes while you heat the skillet.
  • Heat the skillet: Place a large skillet over medium-high heat and add the olive oil. Give the pan a minute or two to become properly hot. You want the oil to shimmer slightly but not smoke heavily.
  • Add the chicken: Place the chicken pieces into the skillet in a single layer. If the skillet is small, cook the chicken in two batches rather than crowding the pan. Space between the pieces helps them brown instead of releasing moisture and steaming.
  • Sear the first side: Let the chicken cook without moving it for about 2 to 3 minutes. This gives the bottom time to develop a golden-brown crust. If the chicken sticks slightly at first, give it another few seconds rather than forcing it loose immediately.
  • Turn and continue cooking: Stir or turn the chicken pieces and continue cooking for another 3 to 5 minutes, stirring occasionally, until the pieces are browned on several sides and cooked through. The exact time will depend on how large you cut the chicken.
  • Check the chicken: Use a meat thermometer to check the thickest piece. The chicken should reach 165°F internally before you move on to the garlic butter. This ensures the center is fully cooked while keeping the pieces juicy.
  • Lower the heat: Once the chicken is cooked, reduce the heat to medium-low. This is important because the butter and garlic need gentler heat. High heat at this point can burn the garlic before it has time to flavor the sauce.
  • Add the butter: Add the butter directly to the skillet with the chicken. Let it melt completely, then gently toss the chicken through the melted butter so the browned pieces become coated.
  • Add the garlic and thyme: Stir in the minced garlic and dried thyme. Cook for about 30 to 60 seconds, stirring constantly, until the garlic becomes fragrant. Don’t let the garlic turn dark brown because burnt garlic can make the entire sauce bitter.
  • Coat the chicken: Continue tossing the chicken through the garlic butter for another minute so the herbs and garlic distribute evenly. Scrape up any flavorful browned bits from the bottom of the skillet as you stir.
  • Add lemon juice: If you’re using lemon juice, drizzle it over the chicken and toss once more. A little lemon helps balance the richness of the butter without making the chicken taste strongly lemony.
  • Finish with parsley: Turn off the heat and sprinkle the fresh parsley over the chicken. Toss gently so the parsley mixes into the warm butter without cooking away its fresh flavor.
  • Add Parmesan if desired: If you’re using Parmesan, sprinkle it over the hot chicken and toss lightly. The cheese will cling to the butter-coated chicken and give the bites a slightly salty, nutty finish.
  • Let the chicken rest briefly: Allow the chicken to sit in the skillet for about 2 minutes before serving. This gives the garlic butter a little time to settle onto the chicken and lets the flavors come together.
  • Serve immediately: Transfer the chicken bites to a serving dish while they’re still warm. Spoon any remaining garlic herb butter from the skillet over the top so none of that flavor gets left behind.

What to Serve Garlic Herb Chicken Bites With

These chicken bites are easy to build a meal around because they work with almost any simple side. Rice is one of my favorite options because it catches the garlic butter and turns the chicken into a more filling dinner. Mashed potatoes work for the same reason.

For a lighter plate, serve the chicken with roasted broccoli, green beans, asparagus, or a simple mixed salad. The vegetables bring some freshness to the buttery chicken without competing with the garlic and herbs.

You can also serve the bites with pasta. Toss the cooked pasta with a little of the leftover garlic butter from the skillet and add the chicken on top. A little Parmesan and parsley make it feel like a completely different meal.

For lunch, I like using the chicken in wraps or grain bowls. Add lettuce, tomatoes, cucumber, rice, and a light dressing for an easy meal that doesn’t require much extra cooking.

How to Store and Reheat Garlic Herb Chicken Bites

Let the chicken cool before transferring it to an airtight container. Store it in the refrigerator for up to 3 to 4 days. Keep any extra garlic butter from the skillet with the chicken because it helps prevent the pieces from drying out when reheated.

For the best texture, reheat the chicken in a skillet over medium-low heat with a small splash of water or chicken broth. Cover the skillet and warm the chicken for about 3 to 5 minutes, stirring occasionally, until it is heated through. The added moisture helps keep the chicken tender.

You can also microwave the chicken in a covered container. Heat it in 30 to 45 second intervals, stirring between each interval, until hot. Avoid overheating it because small chicken pieces can dry out quickly in the microwave.

If you want to freeze the chicken, let it cool completely before placing it in a freezer-safe container or bag. Freeze it for up to 2 months for the best quality. Thaw it overnight in the refrigerator, then reheat gently in a skillet with a small splash of broth.

After reheating, a little fresh parsley and a squeeze of lemon can bring the flavor back to life. Fresh toppings are especially useful with leftover chicken because they add brightness after storage and reheating.
