Dorito Chicken Casserole

Dorito Chicken Casserole has a crunchy, cheesy topping that makes an ordinary chicken dinner feel a lot more fun. The crushed Doritos add plenty of flavor on their own, while the creamy chicken filling underneath stays warm, cheesy, and satisfying.

I make this when I want something that doesn’t require much effort but still gets everyone interested when it comes out of the oven. The hardest part is probably trying not to eat too many Doritos while you’re putting it together.

What I like most is the contrast. You have tender chicken and a creamy sauce underneath, then a layer of melted cheese and crunchy Doritos on top. Every forkful gives you a little bit of everything.

It’s also an easy recipe to adjust. You can add black beans, corn, diced green chiles, or a little extra cheese if you have them on hand. I usually keep the basic version simple and let the Doritos do most of the flavor work.

  • 1/2 cup salsa: Salsa brings tomato flavor, moisture, and a little spice to the chicken mixture. Use mild or spicy depending on what you like.
  • 1/2 cup shredded cheddar cheese: Cheddar melts into the filling and gives the casserole a familiar cheesy flavor.
  • 1/2 cup shredded Mexican-blend cheese: This adds another layer of melted cheese and works especially well with the taco-seasoned flavors.
  • 1 teaspoon taco seasoning: Taco seasoning gives the chicken mixture a warm, savory flavor without needing a long list of individual spices.
  • 1/4 cup milk: Milk loosens the creamy mixture so it spreads easily and doesn’t become overly thick during baking.

For the Dorito Topping

  • 1 1/2 cups Doritos, lightly crushed: Nacho cheese Doritos are the classic choice. Crush them into bite-size pieces and crumbs rather than a fine powder so the topping stays crunchy.
  • 1/2 cup shredded cheddar cheese: Adding cheese over the chicken before the Doritos gives you a gooey layer that helps hold the topping together.
  • 2 tablespoons chopped green onions, optional: Green onions add a fresh finish and a little color. You can leave them off if you prefer a simpler casserole.

How to Make Dorito Chicken Casserole

  • Preheat the oven: Heat your oven to 375°F and lightly grease an 8×8-inch or similar-sized baking dish. Greasing the dish makes it easier to scoop out the casserole and helps prevent the creamy filling from sticking.
  • Prepare the chicken: Chop the cooked chicken into small bite-size pieces. If you are using rotisserie chicken, remove the skin and bones before chopping, then set the chicken aside while you prepare the sauce.
  • Make the creamy sauce: Add the cream of chicken soup, sour cream, salsa, milk, and taco seasoning to a large bowl. Stir until the ingredients are well combined and the mixture looks smooth and creamy.
  • Add the chicken and cheese: Fold the chopped chicken, 1/2 cup cheddar cheese, and Mexican-blend cheese into the sauce. Stir gently until the chicken is completely coated and the cheese is evenly distributed.
  • Spread the filling into the dish: Transfer the chicken mixture to the prepared baking dish and spread it into an even layer. Smooth the top with the back of a spoon so the cheese and Doritos can be added evenly.
  • Add the first layer of cheese: Sprinkle the remaining 1/2 cup cheddar cheese over the chicken mixture. This creates a melted, cheesy layer between the creamy filling and crunchy topping.
  • Crush the Doritos: Place the Doritos in a sealed bag and gently crush them with your hands. Keep a mixture of small crumbs and slightly larger pieces so the topping has plenty of texture instead of becoming a thin layer of powder.
  • Add the Dorito topping: Sprinkle the crushed Doritos evenly over the cheese. Try to cover most of the surface, but don’t press them down because leaving them loose helps them stay crunchy as they bake.
  • Bake the casserole: Place the dish in the oven and bake for about 20 to 25 minutes, or until the filling is hot and bubbling around the edges and the cheese underneath the Doritos has melted.
  • Protect the Doritos if needed: Keep an eye on the topping during the final minutes. If the Doritos are browning faster than the casserole is heating through, loosely cover the dish with foil so the chips don’t burn.
  • Finish with green onions: If you are using green onions, sprinkle them over the casserole after it comes out of the oven. Adding them at the end keeps their flavor fresh and gives the finished dish a little color.
  • Let it rest: Allow the casserole to sit for about 5 minutes before serving. This gives the creamy filling a chance to settle slightly and makes it easier to scoop without the sauce spreading all over the plate.
  • Serve warm: Spoon the casserole onto plates while the Dorito topping is still crisp. Try to scoop from the bottom so each serving gets chicken, creamy sauce, melted cheese, and plenty of crunchy Doritos.

What to Serve Dorito Chicken Casserole With

I like serving this casserole with something fresh to balance the creamy, cheesy filling. A simple green salad, sliced avocado, tomatoes, or a crunchy cabbage slaw all work well. Steamed corn or black beans can also fit nicely with the Mexican-inspired flavors without adding much extra work.

If you want to make the meal more substantial, serve it with rice or warm flour tortillas. You can also put out small bowls of salsa, sour cream, sliced jalapeños, or chopped green onions so everyone can add what they like. I would keep the sides fairly simple because the casserole already has plenty going on.

How to Store and Reheat Dorito Chicken Casserole

Store leftover casserole in an airtight container or cover the baking dish tightly and refrigerate it for up to 3 to 4 days. The Doritos will soften once they sit in the creamy filling, so the topping won’t have quite the same crunch the next day.

For the best results, reheat portions in a 350°F oven until heated through, then add a few fresh crushed Doritos on top for extra crunch. An air fryer can also work well for individual portions. The microwave is the quickest option, but it will leave the Dorito topping soft.
