Crispy Chicken Parmesan Sandwich

September 8, 2026 by khadaraliadan Leave a Comment

Crispy Chicken Parmesan Sandwich is what I make when I want chicken Parmesan but don’t feel like putting together a full dinner plate. Everything goes into a toasted bun instead: crispy chicken, warm marinara sauce, melted mozzarella, and a little Parmesan.

The chicken is the part that makes this sandwich worth making. A thin chicken breast gets coated in seasoned breadcrumbs and cooked until the outside is crisp and golden, while the inside stays juicy and tender.

I like using a toasted roll because it gives the sandwich enough structure to hold the sauce and chicken without falling apart. Once the mozzarella melts over the top, the whole thing feels like a restaurant-style sandwich made right in your kitchen.

And you don’t need a huge chicken breast for each sandwich. One large chicken breast can make two good-sized sandwiches when you slice it properly, which keeps the recipe simple and practical.

Why You Will Love This Recipe

The contrast is what gets me every time. You have crunchy chicken on the outside, tender chicken inside, warm tomato sauce, and stretchy melted cheese all in one bite. The toasted bread adds another layer of texture without making the sandwich overly complicated.

You can also prepare parts of this recipe ahead of time. The chicken can be breaded earlier in the day, and the sauce can be warmed when you’re ready to assemble everything.

For the best result, don’t drown the chicken in sauce. A thin layer of marinara keeps the crust crispy while still giving you plenty of that classic Parmesan flavor.

What Is Crispy Chicken Parmesan Sandwich?

A Crispy Chicken Parmesan Sandwich is a handheld version of classic chicken Parmesan. Instead of serving breaded chicken with pasta, the crispy chicken is placed inside a toasted sandwich roll with marinara sauce, mozzarella, and Parmesan cheese.

The chicken can be pan-fried, baked, or air-fried, but the goal is always the same: a crisp coating with a juicy center. Once the cheese melts over the hot chicken, it becomes a hearty sandwich that’s easy to serve for lunch or dinner.

Ingredients for Crispy Chicken Parmesan Sandwich

For the Crispy Chicken

  • 1 large boneless, skinless chicken breast: One large breast is enough for two sandwiches. Slice it horizontally into two thinner pieces so it cooks faster and gives you a better chicken-to-bread ratio.
  • 1/4 teaspoon salt: Salt seasons the chicken itself and keeps the finished sandwich from tasting flat.
  • 1/4 teaspoon black pepper: Pepper adds a little warmth and works well with the Italian-style seasoning.
  • 1/2 teaspoon garlic powder: Garlic powder adds savory flavor directly to the chicken coating.
  • 1/2 teaspoon Italian seasoning: This gives the breadcrumbs a simple blend of herbs without needing several separate seasonings.
  • 1/2 cup breadcrumbs: Breadcrumbs create the crispy outer coating. Regular breadcrumbs work well, while panko gives you a crunchier texture.
  • 1 egg: The beaten egg helps the breadcrumb coating stick evenly to the chicken.
  • 2 tablespoons all-purpose flour: Flour gives the egg something to cling to and helps create a more even, sturdy coating.
  • 2 tablespoons grated Parmesan: Parmesan adds salty, nutty flavor directly to the crispy coating and helps it brown nicely.
  • 2 tablespoons olive oil: Olive oil is used for pan-frying the chicken and helps the coating become golden and crisp.

For the Parmesan Topping

  • 1/2 cup marinara sauce: Marinara adds the classic tomato flavor of chicken Parmesan. Use a sauce you already enjoy because its flavor will come through in every bite.
  • 1/2 cup shredded mozzarella: Mozzarella melts into a creamy, stretchy layer over the chicken. Low-moisture mozzarella is especially easy to melt without making the bread soggy.
  • 2 tablespoons grated Parmesan: Parmesan gives the sandwich a stronger cheesy finish and adds a little more savory flavor.
  • 1 tablespoon chopped fresh basil, optional: Basil adds freshness and gives the sandwich a nice finish after the rich cheese and marinara.

For the Sandwich

  • 2 sandwich rolls or hoagie rolls: Choose sturdy rolls that can hold the chicken and sauce without becoming too soft. Ciabatta or Italian-style rolls work particularly well.
  • 1 tablespoon butter: Butter helps the bread toast until golden and adds a little extra flavor.
  • 1 small garlic clove, optional: Rubbing the warm toasted bread with garlic gives it a subtle garlic-bread flavor that works beautifully with Parmesan chicken.

How to Make Crispy Chicken Parmesan Sandwich

  • Prepare the chicken: Place the chicken breast on a cutting board and carefully slice it horizontally through the middle to create two thinner pieces. If the pieces are still thick in some areas, cover them with plastic wrap and gently pound them with a meat mallet until they are an even thickness. This helps the chicken cook evenly and prevents the outside from becoming too dark before the center is done.
  • Season the chicken: Sprinkle both sides of the chicken with salt, black pepper, garlic powder, and Italian seasoning. Rub the seasonings gently over the surface so each piece is evenly flavored before you start breading.
  • Set up the breading station: Place the flour in one shallow bowl, beat the egg in a second bowl, and combine the breadcrumbs with grated Parmesan in a third bowl. Keeping the bowls in this order makes the process much easier: flour first, egg second, then breadcrumbs.
  • Coat the chicken: Take one piece of chicken and lightly coat it in flour, shaking off the excess. Dip it into the beaten egg and let any extra egg drip back into the bowl. Finally, press the chicken firmly into the breadcrumb mixture, turning it so the entire surface is covered. Repeat with the second piece.
  • Let the coating settle: Place the breaded chicken on a clean plate and let it sit for about 5 minutes. This short rest gives the coating time to adhere to the chicken, which helps prevent it from sliding off during cooking.
  • Heat the oil: Add the olive oil to a large skillet and heat it over medium heat. The oil should be hot enough that a small breadcrumb dropped into the pan immediately sizzles, but it should not be smoking. If the oil is too hot, the breadcrumbs can burn before the chicken cooks through.
  • Cook the chicken: Carefully place the breaded chicken into the skillet and cook for about 4 to 5 minutes per side, depending on thickness. Avoid moving the chicken around too much while it cooks because leaving it undisturbed helps the crust become deeply golden and crisp.
  • Check the chicken: Use a meat thermometer to make sure the thickest part of the chicken reaches 165°F. The coating should be crisp and golden, while the chicken inside should be completely cooked and juicy.
  • Warm the marinara: While the chicken cooks, warm the marinara sauce in a small saucepan over low heat. You only need it hot enough to spoon over the chicken, so keep the heat gentle rather than letting the sauce boil.
  • Toast the rolls: Cut the sandwich rolls open without slicing completely through them. Spread the cut sides lightly with butter and place them cut-side down in a clean skillet over medium heat. Toast for 2 to 3 minutes, until the edges are golden and crisp. If you want extra garlic flavor, rub the toasted surface lightly with a cut garlic clove.
  • Add the marinara: Place the cooked chicken on a baking sheet or oven-safe skillet. Spoon a thin layer of warm marinara over each piece of chicken. Don’t add too much sauce, because excess moisture can soften the crispy coating.
  • Add the cheese: Sprinkle the mozzarella over the marinara, followed by the grated Parmesan. Make sure the cheese is spread across the chicken so it melts evenly instead of collecting in one spot.
  • Melt the cheese: Place the chicken under the broiler for about 1 to 2 minutes, watching it closely the entire time. The cheese should become melted and bubbly with a few lightly browned spots. Broilers can vary a lot, so don’t walk away during this step.
  • Build the sandwiches: Place each cheesy chicken piece inside a toasted roll. If the chicken is larger than the roll, you can cut it in half or trim it slightly so the sandwich is easier to eat.
  • Finish with basil: Sprinkle a little fresh chopped basil over the melted cheese if you’re using it. You can also add a small amount of extra Parmesan for a stronger cheesy finish.
  • Serve immediately: Let the sandwiches sit for about 1 minute before serving, then eat them while the chicken is still crisp and the cheese is warm and stretchy. Serving them right away gives you the best contrast between the crunchy coating and soft toasted bread.

What to Serve Crispy Chicken Parmesan Sandwich With

Because the sandwich is rich and cheesy, I like serving it with something fresh or crisp on the side. A simple green salad with a light vinaigrette works especially well because the acidity cuts through the marinara, cheese, and crispy coating.

For a classic casual meal, serve the sandwich with oven-baked fries, potato wedges, or roasted potatoes. You can also add a small cup of extra marinara for dipping if you like more sauce without putting it directly on the chicken.

A light vegetable side is another good option. Roasted broccoli, green beans, or a simple tomato salad all work nicely and keep the meal from feeling too heavy.

If you’re serving these for a game-day lunch or casual gathering, cut each sandwich in half and serve them with extra marinara, Parmesan, and a simple salad. The smaller portions are easier to handle and make the sandwiches feel more like something you’d order at a good sandwich shop.

How to Store and Reheat Crispy Chicken Parmesan Sandwich

If you have leftover chicken, store the chicken separately from the bread whenever possible. Place the cooked chicken in an airtight container and refrigerate it for up to 3 to 4 days. Keep the rolls separate so they don’t absorb moisture from the marinara and lose their texture.

For the best reheating result, use an oven or air fryer rather than the microwave. Heat the chicken at 375°F for about 8 to 12 minutes, turning it once if needed, until it is hot and the coating becomes crisp again. Add the marinara and cheese during the final few minutes so the cheese melts without making the chicken soggy.

If you’re using an air fryer, reheat the chicken at 350°F for about 5 to 7 minutes. Add the sauce and cheese near the end and continue cooking just until the cheese melts.

Toast a fresh roll before assembling the reheated sandwich. Don’t assemble the sandwich before storing it, because the marinara will soak into the bread and soften the crispy chicken. Once everything is hot, add the chicken to the toasted roll and finish with fresh Parmesan or basil.
