I don’t think a creamy soup needs a long ingredient list to taste rich. Here, the garlic does most of the talking. You get plenty of flavor from a few simple ingredients, and the chicken makes the soup hearty enough to serve as dinner.

The texture is smooth and comforting without being overly thick. I like keeping some of the chicken and vegetables in the broth rather than turning everything into a heavy cream sauce.

A little Parmesan at the end makes a noticeable difference too. It adds a salty, savory finish that works beautifully with the garlic and cream.

  • 1 large chicken breast: One large chicken breast gives you plenty of tender chicken without making the soup overly heavy. Cut it into bite-sized pieces so it cooks quickly and evenly.
  • 1 tablespoon olive oil: Olive oil helps cook the chicken and keeps it from sticking to the bottom of the pot.
  • 2 tablespoons butter: Butter adds richness and gives the garlic and onion a flavorful base to cook in.
  • 1 small onion, diced: Onion adds natural sweetness and savory depth to the soup. Dice it fairly small so it softens quickly.
  • 5 cloves garlic, minced: Garlic is the main flavor here, so don’t be shy with it. Fresh garlic gives the soup a much better flavor than garlic powder.
  • 1/2 teaspoon salt: Salt seasons the chicken and broth while helping bring out the flavor of the garlic and onion.
  • 1/4 teaspoon black pepper: Pepper adds gentle warmth and balances the creamy broth.

  • 4 cups chicken broth: Chicken broth creates the main base of the soup and gives the chicken and vegetables something flavorful to simmer in.

How to Make Creamy Garlic Chicken Soup

  • Prepare the chicken: Cut the chicken breast into small, even bite-sized pieces. Season them lightly with salt and black pepper, making sure the pieces are evenly coated. Keeping the chicken pieces similar in size helps them cook at the same rate.
  • Brown the chicken: Heat the olive oil in a large heavy-bottomed pot over medium-high heat. Add the chicken in a single layer and cook for about 4 to 5 minutes, stirring occasionally, until the outside is lightly browned and the chicken is nearly cooked through. You don’t need to fully brown every side because the chicken will finish cooking in the broth.
  • Set the chicken aside: Transfer the chicken to a clean plate and leave the pot on the stove. Keep the browned bits in the bottom of the pot because they add extra flavor to the soup.
  • Cook the onion: Reduce the heat to medium and add the butter to the same pot. Once it melts, add the diced onion and cook for about 4 to 5 minutes, stirring occasionally, until the onion becomes soft and translucent. Avoid rushing this step because softened onion creates a sweeter, more flavorful base.
  • Add the garlic: Stir in the minced garlic and cook for about 30 to 60 seconds, stirring constantly. The garlic should become fragrant but should not turn dark brown. If it starts browning quickly, lower the heat because burnt garlic can make the soup bitter.
  • Add the broth: Pour in the chicken broth slowly while stirring and scrape the bottom of the pot with a wooden spoon. This loosens the browned bits from the chicken and mixes them into the soup instead of leaving all that flavor behind.
  • Season the soup: Add the dried thyme and Italian seasoning, then return the chicken and any juices from the plate to the pot. Stir everything together and bring the broth to a gentle simmer.
  • Simmer the chicken: Let the soup simmer uncovered for about 10 to 12 minutes, stirring occasionally. The chicken should become fully cooked and tender, reaching 165°F internally. If you’re adding diced potatoes, add them with the broth so they have enough time to become fork-tender.
  • Add optional vegetables: If you’re using mushrooms, add them during the final 5 to 7 minutes of simmering so they have time to soften. Add spinach near the end because it only needs a minute or two to wilt into the hot broth.
  • Add the cream: Reduce the heat to low before stirring in the heavy cream. Pour it in slowly while stirring so it blends smoothly with the broth. Let the soup warm gently for about 3 to 4 minutes, but avoid bringing it to a hard boil after adding the cream.
  • Stir in the Parmesan: Add the grated Parmesan gradually, stirring until it melts into the broth. The soup should become slightly thicker and creamy while still being loose enough to eat comfortably with a spoon.
  • Taste and adjust: Taste the soup carefully and add more salt or pepper if needed. Parmesan and chicken broth can both contain quite a bit of salt, so taste before adding more rather than seasoning automatically.
  • Check the consistency: If the soup seems too thick, add a little extra chicken broth or milk and stir until it reaches the consistency you like. If it is thinner than you want, let it simmer gently for another minute or two, keeping the heat low.
  • Finish with parsley: Turn off the heat and stir in the chopped fresh parsley if you’re using it. You can also add a little extra Parmesan or freshly cracked black pepper for a stronger finish.

What to Serve Creamy Garlic Chicken Soup With

A creamy soup like this pairs really well with something crisp or crunchy. Crusty bread is my first choice because you can dip it directly into the garlic Parmesan broth. Garlic bread also works, although the soup already has plenty of garlic flavor.

For a lighter side, serve the soup with a simple green salad dressed with lemon juice or vinaigrette. The fresh, slightly acidic dressing helps balance the creamy broth.

If you want to make the meal more substantial, you can add a grilled cheese sandwich, toasted sourdough, or a small serving of roasted vegetables. I would keep the side fairly simple because the chicken already makes the soup filling.

How to Store and Reheat Creamy Garlic Chicken Soup

Let the soup cool slightly before transferring it to airtight containers. Store it in the refrigerator for up to 3 to 4 days. If you know you’ll be reheating several portions, individual containers make it easier to warm only what you need.

When reheating on the stovetop, place the soup in a saucepan over medium-low heat and stir occasionally. Warm it slowly rather than bringing it to a rapid boil because high heat can cause the cream to separate. If the broth has thickened in the refrigerator, add a splash of chicken broth or milk to loosen it.

For one serving, you can reheat the soup in the microwave. Cover the bowl loosely and heat in 30 to 60 second intervals, stirring between each interval until the soup is hot throughout. This slower approach helps prevent the creamy broth from overheating.

The soup can also be frozen, but the creamy texture may change slightly after thawing. If you plan to freeze it, cool the soup completely and store it in a freezer-safe container for up to 2 months. Thaw it overnight in the refrigerator, then reheat gently on the stovetop and stir well. A small splash of cream or broth can help bring the texture back together.
