Creamy Garlic Chicken Pasta is one of those dinners I can put together when I want something comforting without making the evening complicated. The chicken gets golden in the skillet, then the same pan becomes the base for a creamy garlic sauce.

There is a lot of flavor here without needing many ingredients. Fresh garlic, butter, cream, and Parmesan are enough to make a sauce that coats every piece of pasta.

I usually reach for this recipe when I have chicken in the fridge and want to turn it into something a little more satisfying. It comes together quickly, but it still feels like a proper homemade dinner.

The best part for me is the sauce. It is creamy and rich, but the garlic keeps it from tasting too heavy, especially when finished with a little fresh parsley and Parmesan.

  • Reserve the pasta water: Before draining the pasta, carefully scoop out about ½ cup of the cooking water and set it aside. The starchy water will help loosen the sauce later and make it easier for the Parmesan and cream to coat the pasta evenly.
  • Season the chicken: Cut the chicken breast into small, evenly sized pieces so they cook at the same rate. Season the pieces on all sides with salt and black pepper, making sure the seasoning is distributed evenly.
  • Brown the chicken: Heat the olive oil in a large skillet over medium-high heat. You can also reheat individual portions in the microwave. Heat in short intervals and stir between each one so the pasta warms evenly. Avoid overheating the pasta, as the chicken can dry out and the Parmesan sauce can become too thick.
