Chicken Pot Pie Soup brings all the cozy parts of a classic pot pie into a warm bowl without having to make a crust from scratch. I usually reach for this recipe when I want something comforting but still easy enough for a weeknight.

The first time I made it, I was mostly curious whether the soup would really have that familiar pot pie flavor. It does. The tender chicken, soft vegetables, creamy broth, and buttery seasoning all come together in a way that feels very familiar.

I also like that you can make the whole thing in one pot. There is no separate sauce to prepare, and you can use leftover cooked chicken if you already have some in the refrigerator.

Serve it with something warm and crispy on the side, and you get that pot pie experience without all the extra work.

How to Make Chicken Pot Pie Soup

  • Prepare the ingredients: Dice the onion, carrots, and potato into small, even pieces so they cook at the same rate. Cut the chicken into bite-sized pieces and mince the garlic before you start cooking, since everything comes together fairly quickly once the pot is heated.
  • Cook the vegetables: Place a large pot or Dutch oven over medium heat and add the butter. Once melted, add the onion and carrots and cook for about 4 to 5 minutes, stirring occasionally, until the onion softens and the carrots begin to become tender.
  • Add the garlic and chicken: Stir the minced garlic into the vegetables and cook for about 30 seconds until fragrant. Add the chicken pieces, season with salt, black pepper, and thyme, and cook for about 4 to 5 minutes, stirring occasionally, until the outside of the chicken is no longer pink.

What to Serve Chicken Pot Pie Soup

Chicken Pot Pie Soup is already hearty, so I usually keep the sides simple. Warm biscuits are probably the closest match to the classic pot pie experience. You can split one open and dip it directly into the creamy soup.

Crusty French bread or a simple dinner roll works just as well. The crunchy outside and soft inside give you something to contrast with the creamy soup.

If you want something fresh alongside it, serve a simple green salad with lettuce, cucumber, and a light dressing. It adds some freshness without taking attention away from the soup.

For a cozy family dinner, I would keep it simple with the soup, warm biscuits, and maybe a little fresh parsley on top. You really do not need much more.

How to Store and Reheat

Store leftover Chicken Pot Pie Soup in an airtight container in the refrigerator for 3 to 4 days. Let the soup cool slightly before transferring it to the container, then refrigerate it promptly.

The soup will usually become thicker after chilling because of the flour and cream. When reheating, add a small splash of chicken broth or milk to loosen it back up.

For the best texture, reheat it slowly in a saucepan over medium-low heat, stirring occasionally until heated through. Avoid bringing the creamy soup to a hard boil, as high heat can cause the cream to separate.

You can also reheat individual portions in the microwave. Heat in short intervals and stir between each one so the soup warms evenly.

If you are serving leftovers with biscuits or bread, warm those separately so they stay crisp and fresh rather than becoming soft in the soup.

  6. Add the diced potato, reduce the heat to medium-low, and simmer for about 15 minutes until the potatoes are tender.
  7. Stir in the frozen peas and heavy cream and cook for another 5 minutes until the peas are tender and the cream is heated through.
  8. Check that the chicken is fully cooked. Taste and adjust the salt, pepper, or thyme, and add extra broth if you want a thinner soup.
  9. Turn off the heat and let the soup rest for a couple of minutes so the creamy broth can settle and thicken slightly.
  10. Ladle the soup into bowls and serve warm with biscuits or crusty bread and optional fresh parsley.
