Chicken Mac Cheese Casserole is the dinner I make when regular mac and cheese just doesn’t feel like enough. Adding tender chicken turns it into a filling meal, and once the cheese is bubbling on top, it is hard to resist going back for another scoop.

I like using a small amount of seasoning here because the cheese should be the star. The chicken adds substance, while the creamy sauce works its way into the pasta so every bite stays rich and comforting.

This is also a good recipe for using leftover chicken. I can shred it, mix everything together, and have the casserole ready for the oven without starting a complicated meal from scratch.

The golden cheese on top is the part everyone notices first. Letting it bake uncovered gives the casserole a little color while keeping the pasta underneath soft and creamy.

For the Mac and Cheese

  • 8 ounces elbow macaroni, or another short pasta you have on hand.

  • 2 cups shredded cheddar cheese, divided between the sauce and topping.
  • 1 cup milk, for the creamy cheese sauce.
  • 1/2 cup sour cream, for extra creaminess.
  • 2 tablespoons butter, for richness.
  • 1/2 teaspoon garlic powder, for simple savory flavor.
  • Salt and black pepper, to taste.

For the Topping

  • 1/2 cup shredded cheddar cheese, for a bubbly, cheesy finish.
  • 2 tablespoons breadcrumbs, optional, for a little crunch.

How to Make Chicken Mac Cheese Casserole

  • Preheat the oven to 375°F and prepare the baking dish. Lightly grease a 9×13-inch casserole dish with cooking spray or a little butter so the cheesy pasta does not stick while baking.
  • Cook the macaroni until just tender. Bring a large pot of salted water to a boil and cook the macaroni according to the package directions. Stop when it is just tender rather than very soft because the pasta will continue cooking in the oven. Drain it well and set it aside.
  • Start the creamy cheese sauce. Melt the butter in a saucepan over medium-low heat, then add the milk and sour cream. Stir gently until the mixture is warm and smooth, but avoid bringing it to a strong boil because the sour cream can separate.
  • Melt the cheese into the sauce. Reduce the heat to low and gradually stir in about 1 1/2 cups of the shredded cheddar. Keep stirring until the cheese melts into a smooth, creamy sauce. Add the garlic powder, salt, and black pepper, then taste and adjust the seasoning if needed.
  • Combine the pasta and chicken. Add the cooked macaroni and chicken to a large bowl, then pour the cheese sauce over them. Stir gently until the sauce coats the pasta and chicken evenly, making sure there are no large dry areas.
  • Add some extra cheese to the mixture. Stir in another small handful of shredded cheddar for extra cheesiness throughout the casserole. This gives you melted cheese in the filling as well as on top.
  • Transfer the mixture to the baking dish. Spoon the cheesy chicken macaroni into the prepared dish and spread it evenly. Gently smooth the top with a spoon so the cheese topping can cover the casserole from edge to edge.
  • Add the final cheese layer. Sprinkle the remaining cheddar over the top of the casserole. If you’re using breadcrumbs, sprinkle them lightly over the cheese so they can become golden and crisp as the casserole bakes.
  • Bake until hot and bubbling. Place the uncovered casserole in the oven and bake for about 20–25 minutes, or until the cheese has completely melted and the edges are bubbling. If the casserole was refrigerated before baking, it may need another 5–10 minutes.
  • Brown the top if you like. For a deeper golden finish, switch the oven to broil for the last 1–2 minutes. Watch it carefully because the cheese and breadcrumbs can brown very quickly.
  • Let the casserole rest before serving. Remove the dish from the oven and let it sit for about 5–10 minutes. This allows the cheese sauce to settle around the pasta and makes the casserole easier to scoop.
  • Serve while warm. Spoon the casserole onto plates while the cheese is still melted and creamy. A little chopped parsley or green onion on top adds fresh color if you want it.

Chicken Mac Cheese Casserole is already hearty, so I usually pair it with something fresh or green. A simple green salad with a light dressing is an easy way to balance the creamy pasta.

Steamed broccoli, green beans, or roasted carrots also work well. They add some freshness without taking much time to prepare.

If you’re serving a larger meal, warm dinner rolls can be added on the side. I would keep the rest of the meal fairly simple because the casserole itself is filling and rich.

How to Store and Reheat Chicken Mac Cheese Casserole

Store leftover Chicken Mac Cheese Casserole in an airtight container or cover the baking dish tightly and refrigerate it for up to 3–4 days. Let it cool slightly before refrigerating, but don’t leave it sitting out for an extended period.

For individual servings, reheat the casserole in the microwave for about 1–2 minutes, stirring halfway through if needed. If the pasta looks dry, add a small splash of milk before reheating to help bring the cheese sauce back to a creamy consistency.

For a larger portion, cover the casserole with foil and warm it in a 350°F oven until heated through. Keeping it covered helps prevent the pasta from drying out while the cheese warms.
