Chicken Cobbler Casserole is what I make when I want the comfort of chicken pot pie but don’t feel like dealing with a pie crust. The filling is creamy and savory, and the soft, golden biscuit topping bakes right over the chicken.

I like how quickly this comes together. With cooked chicken and a few simple ingredients, you can have the casserole ready for the oven without much chopping or prep.

The topping is my favorite part. It turns lightly golden on top while staying tender underneath, soaking up some of the creamy chicken filling as it bakes.

On a cold evening, this is the kind of meal I want waiting on the table. Add a simple vegetable or salad, and you don’t really need anything else.

Chicken Cobbler Casserole combines creamy chicken filling and a golden biscuit topping in one easy dish. It has the cozy flavors of a classic chicken pot pie but takes much less work.

Using cooked chicken makes this recipe especially convenient. Rotisserie chicken is an easy choice, but leftover roasted or baked chicken works just as well.

The frozen vegetables also save time. You can add them straight to the filling, so there is no need to chop several different vegetables before you start cooking.

Ingredients for Chicken Cobbler Casserole

For the Chicken Filling

  • 2 cups cooked chicken, shredded or chopped into small pieces.
  • 1 can cream of chicken soup, for the creamy base.
  • 1/2 cup chicken broth, to loosen the sauce.
  • 1/2 cup sour cream, for extra creaminess.
  • 1 cup frozen mixed vegetables, such as peas, carrots, and corn.
  • 1/2 teaspoon garlic powder, for simple savory flavor.
  • Salt and black pepper, to taste.

For the Cobbler Topping

  • 1 cup biscuit mix, such as Bisquick or another baking mix.
  • 1/2 cup milk, to make the biscuit batter.
  • 2 tablespoons melted butter, for a richer topping and golden finish.

How to Make Chicken Cobbler Casserole

  • Preheat the oven to 375°F and prepare the baking dish. Lightly grease a 9×13-inch casserole dish with cooking spray or a little butter so the creamy chicken filling does not stick while baking.
  • Make the chicken filling. Add the cream of chicken soup, chicken broth, sour cream, garlic powder, salt, and black pepper to a large bowl. Stir until the mixture is smooth and creamy, making sure the sour cream is fully mixed into the sauce.
  • Add the chicken and vegetables. Stir the cooked chicken and frozen vegetables into the creamy mixture. Mix gently but thoroughly so the chicken and vegetables are spread evenly throughout the sauce.
  • Transfer the filling to the baking dish. Pour or spoon the chicken mixture into the prepared casserole dish and spread it into an even layer. Make sure the filling reaches the corners of the dish so the biscuit topping has an even base underneath it.
  • Prepare the cobbler topping. In a separate bowl, stir the biscuit mix and milk together until a thick batter forms. Don’t overmix it; just stir until the dry ingredients are moistened and there are no large dry patches remaining.
  • Add the biscuit batter to the casserole. Spoon the biscuit mixture over the chicken filling in small portions, leaving a few small spaces between them. The batter will spread as it bakes, so you do not need to cover every inch perfectly.
  • Brush the topping with melted butter. Drizzle or lightly brush the melted butter over the biscuit topping. This helps the biscuits develop a golden, buttery crust as they bake.
  • Bake until the topping is golden and the filling is bubbling. Place the uncovered casserole in the oven and bake for about 30–35 minutes. The biscuit topping should be golden brown and cooked through, while the chicken filling should be hot and bubbling around the edges.
  • Check the center of the topping before removing it from the oven. Insert a toothpick into one of the thicker biscuit portions. If it comes out without wet batter, the topping is ready. If the top is already golden but the center still looks undercooked, loosely cover the casserole with foil and bake for another 5–10 minutes.
  • Let the casserole rest before serving. Take the casserole out of the oven and let it sit for about 5–10 minutes. The filling will thicken slightly as it rests, making it easier to scoop without the creamy sauce running everywhere.
  • Serve while warm. Spoon through the biscuit topping and creamy chicken underneath so each serving gets plenty of both. A little chopped parsley on top adds a fresh finish, but it is completely optional.

What to Serve Chicken Cobbler Casserole

Chicken Cobbler Casserole is already a complete and filling meal, so I usually keep the side dishes simple. A fresh green salad works well because the crisp vegetables and light dressing balance the creamy filling and buttery topping.

You can also serve it with steamed green beans, roasted broccoli, or glazed carrots. These vegetables add some color and freshness without taking much extra time to prepare.

If you’re serving this for a larger family dinner, a little cranberry sauce on the side can also be a nice change. I like keeping the flavors around the casserole simple so the creamy chicken and biscuit topping stay the focus.

How to Store and Reheat Chicken Cobbler Casserole

Store leftover Chicken Cobbler Casserole in an airtight container or cover the baking dish tightly and refrigerate it for up to 3–4 days. Let it cool slightly before refrigerating, but don’t leave it sitting at room temperature for an extended period.

For individual portions, reheat the casserole in the microwave for about 1–2 minutes, then continue heating in short intervals until the chicken filling is hot. The biscuit topping will soften somewhat in the microwave, but the casserole will still taste good.

For a larger portion, cover the casserole loosely with foil and warm it in a 350°F oven until heated through. The oven is the better choice when you want the biscuit topping to regain some of its texture instead of becoming too soft.

  4. Spread the mixture evenly in the prepared baking dish.
  5. Add the cheese or prepared topping evenly over the casserole.
  6. Bake until hot and bubbling and the topping is golden or cooked through, about 25–35 minutes.
  7. Check the center and bake a few more minutes if needed.
  8. Rest for 5–10 minutes before serving.
  9. Serve warm with simple sides or desired toppings.
