  • Season the chicken: Combine the garlic powder, paprika, Italian seasoning, salt, and black pepper. Sprinkle the seasoning evenly over both sides of each chicken breast and gently rub it in.
  • Brown the chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. The chicken does not need to be fully cooked at this point because it will finish cooking in the oven. Transfer it to a plate.
  • Sauté the onion and carrots: In the same skillet, add the diced onion and carrots. Cook for about 4–5 minutes, stirring occasionally, until the onion starts to soften. Cooking them in the same pan allows them to pick up the flavorful browned bits left by the chicken.
  • Add the garlic: Stir in the minced garlic and cook for about 30 seconds. Keep stirring so the garlic becomes fragrant without burning.
  • Toast the rice: Add the uncooked rice to the skillet and stir it with the vegetables for about 1–2 minutes. Lightly toasting the rice adds another layer of flavor and helps keep the grains from tasting bland.
  • Add the broth and seasonings: Pour in the chicken broth and add the butter, dried thyme, salt, and black pepper. Stir everything together and scrape the bottom of the skillet to loosen any browned pieces. Those bits add extra flavor to the rice.
  • Return the chicken: Place the browned chicken breasts on top of the rice mixture. Arrange them evenly so each piece has enough room and the rice remains mostly exposed around the chicken.
  • Cover the skillet: Cover the skillet tightly with an oven-safe lid or aluminum foil. Keeping it covered is important because the trapped steam is what allows the rice to cook properly.
  • Bake: Transfer the covered skillet to the preheated oven and bake for about 25–30 minutes. Avoid removing the cover too often because every time you release the steam, you can affect how evenly the rice cooks.
  • Check the chicken: Carefully remove the cover and check the thickest part of the chicken with a meat thermometer. It should reach 165°F (74°C). If the chicken is done but the rice needs a little more time, remove the chicken and cover the rice again while it finishes cooking.
  • Check the rice: The rice should be tender and most of the broth should be absorbed. If the rice is still firm and the skillet looks dry, add a small amount of hot chicken broth, cover it again, and bake for another 5–10 minutes.
  • Add the peas: Stir the frozen peas into the cooked rice during the final few minutes. The residual heat will warm them through while helping them stay bright and slightly crisp.
  • Let everything rest: Remove the skillet from the oven and let the chicken and rice rest, covered, for about 5–10 minutes. This gives the rice time to finish absorbing the remaining liquid and allows the chicken juices to settle.

For oven reheating, place the chicken and rice in a baking dish and add a few tablespoons of chicken broth. Cover tightly with foil and heat at 350°F (175°C) for about 15–20 minutes, or until warmed through. Keeping the dish covered prevents the rice and chicken from drying out.

You can also reheat the rice in a skillet over medium-low heat. Add a splash of broth or water, cover, and stir occasionally until hot. If the chicken is already cooked, warm it gently rather than cooking it over high heat.

  9. Place the browned chicken on top of the rice mixture and cover the skillet tightly with an oven-safe lid or aluminum foil.
  10. Bake for 25–30 minutes, then check that the chicken reaches 165°F (74°C) and the rice is tender.
