Chicken Breast Marsala is a comforting skillet dinner made with tender chicken breasts cooked in a rich mushroom and Marsala wine sauce. The chicken gets lightly coated and pan-seared until golden, then finished in the creamy sauce so it stays juicy and flavorful.

I love this recipe because it tastes like something you would order at a nice Italian restaurant, but you can make it at home without much work. The combination of golden chicken, earthy mushrooms, buttery sauce, and Marsala wine gives this dish a deep, savory flavor that makes a simple chicken dinner feel special.

The best part is that you don’t need a complicated ingredient list. A couple of chicken breasts, some mushrooms, and a handful of simple pantry ingredients are enough to make a really satisfying meal. Serve it over mashed potatoes, pasta, or rice, and don’t forget something to soak up that sauce.

What Is Chicken Breast Marsala

Chicken Breast Marsala is a classic chicken dish made with chicken breasts, mushrooms, and Marsala wine. The chicken is usually lightly coated in flour and cooked in a skillet until golden, then the same pan is used to make the mushroom sauce.

Marsala wine gives the sauce a slightly sweet, rich flavor that pairs especially well with mushrooms. As the sauce simmers, it becomes more concentrated and picks up all the browned bits left behind from the chicken.

The result is tender chicken covered in a rich mushroom sauce with a buttery, savory finish. It is easy enough for a weeknight but also works beautifully for a date night or family dinner.

Ingredients for Chicken Breast Marsala

For the Chicken

  • 2 boneless, skinless chicken breasts – Two large chicken breasts are enough for a simple dinner. Slice them in half horizontally or pound them thinner so they cook quickly and evenly.
  • ¼ cup all-purpose flour – A light coating helps the chicken turn golden and gives the sauce something to cling to.
  • 1 teaspoon salt – Seasons the chicken and brings out its flavor.
  • ½ teaspoon black pepper – Adds simple seasoning and a little warmth.
  • 1 tablespoon olive oil – Helps the chicken brown nicely in the skillet.

For the Marsala Sauce

  • 8 ounces mushrooms – Use sliced white or cremini mushrooms. They become tender and flavorful as they cook in the sauce.
  • 2 cloves garlic – Adds a little extra savory flavor without overpowering the mushrooms.
  • ¾ cup Marsala wine – This is what gives the sauce its signature rich and slightly sweet flavor.
  • ½ cup chicken broth – Helps create the sauce and keeps it from becoming too strong.
  • 2 tablespoons butter – Makes the sauce smooth, rich, and glossy.
  • 2 tablespoons heavy cream – Adds a little creaminess and softens the flavor of the wine. You can leave it out if you prefer a lighter sauce.
  • 1 tablespoon fresh parsley – Adds a fresh finish and a little color to the finished dish.

How to Make Chicken Breast Marsala

  • Prepare the chicken: Pat the chicken breasts dry with paper towels. If they are thick, slice them in half horizontally or gently pound them until they are an even thickness. This helps them cook evenly without drying out.
  • Season the chicken: Season both sides of the chicken with salt and black pepper. Make sure the seasoning is spread evenly.
  • Coat the chicken: Add the flour to a shallow dish and lightly coat each piece of chicken. Shake off any extra flour. You only need a thin coating.
  • Sear the chicken: Heat a large skillet over medium-high heat and add the olive oil. Once hot, place the chicken in the skillet and cook for about 3–4 minutes per side, or until golden brown and cooked through. Transfer the chicken to a clean plate.
  • Cook the mushrooms: Lower the heat to medium and add the sliced mushrooms to the same skillet. Cook for about 4–5 minutes, stirring occasionally, until they soften and become nicely browned.
  • Add the garlic: Stir in the minced garlic and cook for about 30 seconds. Keep an eye on it because garlic can burn quickly.
  • Add the Marsala wine: Pour the Marsala wine into the skillet and use a wooden spoon to scrape up the browned bits from the bottom. Let it simmer for about 2–3 minutes so the wine can reduce slightly.
  • Add the broth: Pour in the chicken broth and stir everything together. Let the sauce simmer for another 3–5 minutes until it starts to thicken and become more flavorful.
  • Finish the sauce: Lower the heat and stir in the butter and heavy cream. Let the butter melt completely and gently stir until the sauce becomes smooth. Don’t boil the sauce hard once the cream is added.
  • Return the chicken: Place the cooked chicken back into the skillet and spoon the mushroom sauce over the top. Let everything simmer gently for about 2 minutes so the chicken can warm through and absorb some of the sauce.
  • Check the seasoning: Taste the sauce and add a little more salt or pepper if needed. Remember that the sauce will already have plenty of flavor from the wine, mushrooms, broth, and browned chicken.
  • Garnish and serve: Sprinkle fresh parsley over the chicken and spoon plenty of mushroom sauce over each piece. Serve it right away while the sauce is warm and silky.

What to Serve Chicken Breast Marsala

Chicken Breast Marsala is especially good with mashed potatoes because the creamy potatoes soak up the mushroom sauce beautifully. This is probably my favorite way to serve it when I want a cozy, filling dinner.

Pasta is another easy choice. Serve the chicken over spaghetti, fettuccine, or egg noodles and spoon plenty of Marsala sauce over everything. You can also use simple buttered noodles when you want something quick.

For a lighter meal, serve it with roasted broccoli, green beans, asparagus, or a simple salad. The vegetables add freshness and balance the richness of the sauce.

Rice also works well if that’s what you already have in the pantry. The important thing is having something that can catch all that mushroom sauce because leaving it behind is a waste.

How to Store and Reheat

Store leftover Chicken Breast Marsala in an airtight container in the refrigerator for up to 3–4 days. Keep the chicken and mushroom sauce together so the chicken stays moist while it is stored.

For the best results, reheat the chicken gently in a skillet over low to medium-low heat. Add a small splash of chicken broth or water to loosen the sauce, then cover the skillet and warm everything until heated through. Avoid high heat because it can dry out the chicken and cause the creamy sauce to separate.

You can also reheat individual portions in the microwave. Place the chicken and sauce in a microwave-safe dish, cover loosely, and heat in 30–60 second intervals, stirring the sauce between intervals when possible.

If the sauce becomes thicker after refrigeration, don’t worry. A small splash of chicken broth, water, or cream can bring it back to a smooth consistency as it warms.

I think Chicken Breast Marsala is even better as a next-day lunch because the chicken has more time to soak up that mushroom sauce. Just reheat it gently and you will still have a flavorful, comforting meal.

Method

  4. Heat olive oil in a skillet and sear chicken 3–4 minutes per side until golden and cooked through, then transfer to a plate.
  5. Cook sliced mushrooms 4–5 minutes until tender and browned.
  6. Add minced garlic and cook 30 seconds.
  7. Add Marsala wine, scrape browned bits, and simmer 2–3 minutes.
  8. Add chicken broth and simmer 3–5 minutes until the sauce starts to thicken.
  9. Lower heat and stir in butter and heavy cream without boiling hard.
  10. Return chicken and simmer gently for about 2 minutes.
  11. Taste and adjust seasoning.
  12. Garnish with parsley and serve with the mushroom sauce.
