Cajun Chicken Wings

Cajun Chicken Wings have become one of my favorite ways to make wings when I want plenty of flavor without making a complicated sauce. The Cajun seasoning gives the chicken a warm, smoky kick, while the oven does most of the work.

I like getting the wings nicely browned around the edges before serving them. That little bit of crispiness makes the seasoning taste even better, especially when the juices from the chicken start mixing with the spices.

These wings are also easy to adjust. You can use a mild Cajun seasoning if you do not like much heat, or add a little extra seasoning and cayenne when you want them spicier.

They work just as well for dinner as they do for a weekend snack. Put out a simple dipping sauce on the side, and you have a plate of wings that usually does not last very long.

What Is Cajun Chicken Wings

Cajun chicken wings are chicken wings coated with a flavorful blend of Cajun seasoning, garlic, paprika, and a few simple spices before they are baked until golden and crisp.

The seasoning gives the wings a combination of smoky, savory, spicy, and slightly peppery flavor. You do not need a heavy sauce because the spice coating already gives the chicken plenty of character.

For this recipe, I bake the wings at a high temperature so the skin gets crisp while the inside stays juicy. A final few minutes under the broiler can give them an even deeper color if you like your wings extra browned.

Ingredients for Cajun Chicken Wings

For the Chicken

  • 2 pounds chicken wings – Use split wings or whole wings, depending on what you have.
  • 1 tablespoon oil – Helps the seasoning stick and helps the skin brown.
  • 1 1/2 tablespoons Cajun seasoning – This is the main source of flavor, so use a seasoning you enjoy.
  • 1 teaspoon paprika – Adds color and a mild smoky flavor.
  • 1/2 teaspoon garlic powder – Adds extra savory flavor.
  • 1/2 teaspoon onion powder – Rounds out the seasoning.
  • 1/2 teaspoon black pepper – Gives the wings a little more bite.
  • 1/4 teaspoon cayenne pepper – Optional if you want more heat.

For Serving

  • Ranch or blue cheese dressing – A cool, creamy dip works really well with spicy Cajun wings.
  • Celery or carrot sticks – Optional, but they add a fresh crunch alongside the wings.
  • Fresh parsley – Optional for a little color before serving.

How to Make Cajun Chicken Wings

  • Prepare the wings: Pat the chicken wings completely dry with paper towels. Removing as much surface moisture as possible helps the skin become crisp in the oven. Place the wings in a large bowl and make sure they are dry before adding the seasoning.
  • Make the Cajun seasoning mix: In a small bowl, combine the Cajun seasoning, paprika, garlic powder, onion powder, black pepper, and cayenne pepper if you are using it. Stir everything together so the stronger spices are evenly distributed throughout the mixture.
  • Season the chicken: Drizzle the wings with oil and toss them until every piece has a light coating. Sprinkle the Cajun seasoning mixture over the wings and toss again, making sure the seasoning reaches all sides of the chicken rather than sitting in one spot.
  • Prepare the baking sheet: Preheat your oven to 425°F. Line a baking sheet with foil or parchment for easier cleanup, then place a wire rack on top if you have one. Arrange the wings in a single layer with some space between each piece so the hot air can circulate around them.
  • Bake the wings: Place the wings in the oven and bake for about 35 to 45 minutes, turning them halfway through cooking. You want the skin to become golden brown and crisp, with the seasoning slightly darkened around the edges.
  • Check that they are cooked: The thickest part of each wing should reach 165°F internally. If the wings are cooked through but you want darker, crispier skin, move them under the broiler for about 2 to 3 minutes, watching closely so the spices do not burn.
  • Let the wings rest: Remove the wings from the oven and let them rest for a few minutes before serving. This gives the juices a chance to settle and allows the seasoning to stay nicely attached to the crispy skin.
  • Serve the wings: Arrange the hot wings on a platter and serve them with ranch or blue cheese dressing, plus celery or carrot sticks if you like. Add a little fresh parsley over the top for color, then serve them while they are warm and crisp.

What to Serve Cajun Chicken Wings

I like serving these wings with a cool creamy dip because it balances the Cajun spice really well. Ranch and blue cheese are both good choices, especially if you like having something refreshing between bites.

For a complete dinner, add crispy fries, roasted potatoes, coleslaw, or a simple green salad. Corn on the cob is another good option because its natural sweetness works nicely with the spicy seasoning.

If you are putting together a party platter, keep the sides simple with celery, carrots, and a couple of dipping sauces. The wings already bring plenty of flavor, so you do not need several complicated sides.

How to Store and Reheat Cajun Chicken Wings

Store leftover Cajun chicken wings in an airtight container in the refrigerator for up to 3 days. Let them cool slightly before storing, and keep any dipping sauce in a separate container.

For the best texture, reheat the wings in an air fryer or oven at 375°F until they are hot and the skin has crisped up again. I prefer this method because it brings back some of the crispiness that gets lost in the refrigerator.

You can use the microwave when you need something quick, but the skin will be softer. If the wings seem a little dry after reheating, serve them with fresh ranch or blue cheese dressing for a creamy contrast to the spicy Cajun seasoning.
